Pumpkin Orange Baked Oatmeal

  • 1 cup (250ml) Florida Orange Juice
  • 1 cup canned pumpkin puree 
  • 1/4 cup maple syrup 
  • 1 large egg 
  • 1 teaspoon vanilla extract 
  • 2 cups large flake or old-fashioned oats 
  • 1 cup pecans (optional)  
  • 2 teaspoons pumpkin pie spice 
  • 1 teaspoon baking powder 
  • 1/4 teaspoon salt  
  • 1/2 cup milk or milk alternative

  1. Preheat oven to 375ºF. Grease a 9-inch baking dish, or 6 individual ramekins. Set aside 
  1. In a large bowl, whisk together pumpkin puree, maple syrup, egg, and vanilla extract.  
  1. Stir in oats, pecans, pumpkin pie spice, baking powder, and salt.  
  1. Stir in orange juice and milk. Pour into prepared baking dish. 
  1. Bake for 30 to 35 minutes, or until a toothpick inserted into the centre comes out clean. If using individual dishes, bake for 20 to 25 minutes. 
  1. Serve warm or refrigerate and serve from the fridge with your favourite toppings such as milk, maple syrup, yogurt, and fresh fruit.
