Orange Mango Mousse

Ingredients

  • 1/4 cup water
  • 1 tablespoon gelatin
  • 1 cup (250ml) Florida Orange Juice
  • 1 1/2 cups thawed frozen mangos or 1 cup canned mango puree*
  • 1 cup Greek yogurt
  • 3 to 4 tablespoons maple syrup or honey (to taste)
  • 1 teaspoon vanilla extract
  • fresh fruit for garnish

Notes:  If using canned mango puree, adjust sweetness level to taste.

Instruction

Total Time: 4 hours and 15 minutes (includes setting time)

  1. In a small saucepan, combine water and gelatin. Let sit for 5 minutes until softened.
  2. Heat gelatin mixture over low heat until dissolved. Add orange juice and stir to combine. Remove from heat.
  3. Add mangos to blender and puree until smooth before blending in gelatin mixture, yogurt, maple syrup, and vanilla extract.
  4. Divide evenly between 4 glasses or ramekins. Place in fridge to set for about 4 hours, or overnight.
  5. Garnish with your favourite fruit and serve cold.
