Citrus Coconut Cilantro Sauce

Ingredients

  • 1 cup (250 ml) Florida Orange Juice
  • 3 (¼-inch) slices fresh ginger root
  • ¾ cup cilantro
  • ¼ cup sliced onion
  • 4 cloves garlic
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon sugar
  • ½ teaspoon coarse salt
  • ½ teaspoon black pepper
  • ¾ cup coconut milk

What could be tastier than a delicious creamy sauce to enjoy with your favorite protein? This sauce can be used as both a dip and a marinade. Whether you dip vegetarian croquettes, crudités, meat, or tofu in it, this sauce steals the show every time!

  • In food processor, mince ginger root. Add cilantro, onion, garlic, olive oil, sugar, salt and pepper; process until mixture is very fine.
  • Add Florida Orange Juice and coconut milk; process until sauce is smooth, stopping and scraping down sides of bowl several times.
  • Sauce is ready!
  • Serving suggestion: Double the recipe and use the sauce as a marinade. When the sauce is ready, set aside a quarter of the liquid. Marinate the protein of your choice (chicken, pork, shrimp, salmon, tofu). Brush the protein with the remaining sauce while cooking.

  • 1 cup (240 ml) 100% Florida orange juice
  • ¾ cup coconut milk

Preparation

In food processor, mince ginger root. Add cilantro, onion, garlic, olive oil, sugar, salt and pepper; process until mixture is very fine. Add orange juice and coconut milk; process until sauce is smooth, stopping and scraping down sides of bowl several times.

Serving suggestion:

Marinate chicken or pork in half of sauce; baste meat with remaining sauce while cooking.
