Looking for something to add variety to your dinner menu this week? Our Pan-Seared Scallops with Chipotle-Orange Sauce are a light dinner option packed with protein and nutrients from Florida Orange Juice.
- ½ cup (120 ml) Florida Orange Juice
- ¼ cup chopped green onions
- 1 ½ lb. large sea scallops
- 2 tbsp. butter, divided
- ½ tsp. salt, divided
- ½ tsp. paprika
- Cooking spray
- 1 tbsp. finely chopped canned chipotle chiles in adobo sauce
Melt 1 tablespoon of butter in a large skillet coated with cooking spray over medium-high heat.
Sprinkle scallops with paprika and 1/8 teaspoon of salt.
Add scallops to pan; cook for 3 minutes on each side or until browned.
Remove from pan, and keep warm.
Add Florida Orange Juice and chiles to the pan.
Bring to a boil, and cook until reduced to ¼ cup (about 1 minute).
Add 1 tablespoon of butter and the remaining 1/8 teaspoon of salt, stirring with a whisk until smooth.
Serve the sauce with scallops, and garnish with the green onions.
