Sometimes simplicity tastes best: fresh Florida Grapefruit, tomatoes, basil and mozzarella with a balsamic reduction and a drizzle of olive oil, plus salt and pepper to taste.This recipe is a breeze to prepare, and easy to enjoy too.
- 200 g cherry tomatoes, sliced in half
- 1 Florida Grapefruit, segmented and juiced
- 60 g buffalo mozzarella, torn into small pieces
- 2 tbsp. olive oil
- 250 ml balsamic vinegar
- 2 sprigs fresh basil
- Salt and pepper to taste
Marinate the Florida Grapefruit segments in half of the balsamic vinegar, add the remainder to a small pot over medium heat and reduce by half.
Combine the tomatoes, mozzarella, and Florida Grapefruit slices in a bowl and toss; arrange on a plate and drizzle the vinegar reduction and olive oil over top.
