Florida Grapefruit and Salmon Tartar Rolls

Fresh salmon cubes, a few slices of smoked salmon, panko breadcrumbs for crunchiness, freshly cut Florida Grapefruit supremes, all wrapped in a sheet of rice paper. It’s fresh, light and delicious! It’s the ideal recipe to satisfy your tartar cravings.

Ingredients

  • For the Florida Grapefruit and Salmon Tartar Rolls:
  • 2 Florida Grapefruit, cut into supremes
  • 5 rice papers
  • 100 g fresh salmon
  • 2 slices (30 g) smoked salmon
  • ¼ cup capers
  • ½ cup mayonnaise
  • 2 teaspoons sesame oil
  • 1 teaspoon rice vinegar (or cider vinegar)
  • ½ cup panko breadcrumbs
  • For the Citrus Sauce:
  • 80 ml Florida Grapefruit juice
  • Juice of 1 lime
  • 2 tablespoons of soya sauce
  • 1 tablespoon freshly grated ginger
  • 1 small garlic clove, grated
  • 1 tablespoon sesame oil
  • 2 coriander sprigs, chopped

Preparation

1. Cut the grapefruit into supremes. To begin, cut off both ends of the grapefruit on your cutting board, then peel off the skin with a sharp knife. Slide the blade along the membranes to remove the segments. Set aside.

2. Squeeze the membranes to collect the juice in a separate container for the citrus sauce.

3. Chop the fresh and smoked salmon. In a large bowl, combine the chopped fresh salmon, smoked salmon, capers, mayonnaise, sesame oil, vinegar and panko.

4. Soften a rice paper in lukewarm water. On a clean, dry surface, place 2 tablespoons of the mixture in the centre of the rice paper, add 2 or 3 grapefruit supremes, fold over the edges and roll up tightly.

5. Mix all the ingredients for the Citrus Sauce in a small bowl. Set aside for dipping the rolls!
Tip to avoid breaking the rice paper: don’t get it too wet. It suffices to soak each paper in lukewarm water for a few seconds, then place it on a clean cutting board. The paper will be ready to be stuffed.
