Ingredients:
- 3 lbs skinless boneless chicken thighs
- ⅓ cup peanut butter
Thai Peanut Orange Sauce:
- 1 tsp ground ginger
- ½ tsp smoked paprika
- ⅓ cup soy sauce
- 1 cup orange juice
- ½ cup brown sugar
- 2 tbsp ketchup
- 1 tbsp rice vinegar
- 1 tsp sriracha
Garnish:
- Roasted peanuts, roughly chopped
- Cilantro, roughly chopped
Instruction
- Preheat the oven to 350°F.
- Season both sides of the chicken with a dash of garlic powder,saltand pepper on each side.
- Sear the chicken in a large, oiled skillet for 2 – 3 minutes per side.
- Then transfer the skillet to the oven, bake covered for 30 minutes.
- In a medium saucepan, whisk all the sauce ingredients together and simmer for 10 minutes until slightly thick. Then stir in peanut butter until smooth.
- Uncover the skillet with the chicken and bake for another 15 minutes.
- Remove the skillet from the oven and brush the chicken generously with the Thai peanut orange sauce.
- Garnish with peanuts and cilantro and serve with riceimmediately.
