Thai Peanut Orange Chicken – recipe courtesy of @linder_surprise

Ingredients:  

  • 3 lbs skinless boneless chicken thighs  
  • ⅓ cup peanut butter  

Thai Peanut Orange Sauce:  

  • 1 tsp ground ginger  
  • ½ tsp smoked paprika  
  • ⅓ cup soy sauce  
  • 1 cup orange juice  
  • ½ cup brown sugar  
  • 2 tbsp ketchup  
  • 1 tbsp rice vinegar  
  • 1 tsp sriracha 

Garnish:  

  • Roasted peanuts, roughly chopped  
  • Cilantro, roughly chopped 

Instruction

  1. Preheat the oven to 350°F. 
  2. Season both sides of the chicken with a dash of garlic powder,saltand pepper on each side.  
  3. Sear the chicken in a large, oiled skillet for 2 – 3 minutes per side. 
  4. Then transfer the skillet to the oven, bake covered for 30 minutes.
  5. In a medium saucepan, whisk all the sauce ingredients together and simmer for 10 minutes until slightly thick. Then stir in peanut butter until smooth. 
  6. Uncover the skillet with the chicken and bake for another 15 minutes. 
  7. Remove the skillet from the oven and brush the chicken generously with the Thai peanut orange sauce. 
  8. Garnish with peanuts and cilantro and serve with riceimmediately.
