- 1 grapefruit
Florida grapefruit zest
- 250 ml Water, hot
- 225 g Sugar, superfine
- 30 ml Florida grapefruit juice
- 15 ml Florida Grapefruit Syrup (see step 1)
- 15 ml Lime juice
- 45 ml Rum
- 125 ml Ginger beer
- Lime wheel
- Ginger candy
Combine all ingredients, except ginger beer, over fresh ice in Collins glass.Top with chilled ginger beer and stir.
For Florida Grapefruit Syrup:Add Florida grapefruit zest and hot water to superfine sugar.Let sit overnight.Strain and store in refrigerator for up to 1 week.
Garnish with lime wheel and ginger candy.
