Florida Grapefruit Juice Glaze on Cakes

Ingredients

  • 5 mL Florida Grapefruit Juice for the cake and 2 mL Florida Grapefruit Juice for the icing glaze
  • 100 g butter
  • 150 g sugar
  • 4 eggs
  • 200 g flour
  • ½ sachet baking powder
  • 130 g icing sugar
  • 15 g almonds (optional if you’re allergic just remove)

Instruction

  1. Preheat your oven to 180°C/355 °F
  2. Separate the measurements of 5 and 2 mL of Florida Grapefruit Juice
  3. Melt the butter. Remove from heat and mix in the sugar without blanching.
  4. Add the eggs and the 5 mL of Florida Grapefruit Juice. Wisk/beat all together.
  5. Sift together flour, baking powder. Combine dry with wet ingredients.
  6. Pour the mixture into ¾-size muffin tins.
  7. Bake for 30 minutes. Test the cake by pushing the blade of a knife into each of the cakes. It should come out dry. If not, cook for an additional 2-5 minutes.
  8. Once cooked, remove from the over and leave the cakes to cool.
  9. Prepare the glaze by mixing the 2mL of Florida Grapefruit Juice and icing sugar. Drizzle icing over the cakes.
  10. Decorate the cakes with almonds (as needed)
