Chia Pudding with Florida Grapefruit

Ingredients

  • 2 Florida Grapefruit
  • 1/3 cup chia seeds
  • 200ml coconut milk
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1 pinch of cinnamon
  • 2 tablespoons pistachios, shelled and toasted
  • 2 tablespoons coconut shavings

Instruction

The day before:

  1. Remove a few zests from a Florida Grapefruit, then squeeze its juice.
  2. Mix the coconut milk with the chia seeds.
  3. Finely chop the zest and add to the mixture.
  4. Add 1 tablespoon of honey and the vanilla extract, then leave to stand for at least 3 hours or ideally overnight, for the texture to thicken.

 

The day of:

  1. Peel the second Florida Grapefruit and cut into segments. Mix with the cinnamon and the second spoonful of honey.
  2. Place half the segments in the glasses, then fill them with the chia pudding.
  3. Sprinkle the remaining grapefruit slices over the top.
  4. Finish with a sprinkling of crushed toasted pistachios and coconut shavings for a touch of crunch and freshness.
