{"id":719,"date":"2018-06-08T11:34:43","date_gmt":"2018-06-08T15:34:43","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=719"},"modified":"2024-06-04T10:23:19","modified_gmt":"2024-06-04T14:23:19","slug":"zesty-orange-and-shrimp-fajitas","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/zesty-orange-and-shrimp-fajitas\/","title":{"rendered":"Zesty Orange and Shrimp Fajitas"},"content":{"rendered":"\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\"><strong>For Marinade<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 cup (240 ml) Florida Orange Juice<\/li>\r\n<li>\u00bc cup (60 ml) fresh lime juice<\/li>\r\n<li>1 medium onion, peeled and cut into \u00bc-inch strips<\/li>\r\n<li>2 medium red bell peppers, seeded and cut into \u00bc-inch strips<\/li>\r\n<li>2 medium yellow peppers, seeded and cut into \u00bc-inch strips<\/li>\r\n<li>3 oranges, peeled and segmented<\/li>\r\n<li>1 cup fresh cilantro leaves<\/li>\r\n<li>2 tsp. cumin powder<\/li>\r\n<li>2 tsp. ancho chili powder<\/li>\r\n<li>Salt and pepper to taste<\/li>\r\n<li>24 10-to-15 count shrimp (about 1 \u00bd lbs.), peeled and deveined<\/li>\r\n<li>2 tbsp. grapeseed or canola oil<br \/><br \/><\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\"><strong>For Tortillas<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>12 6- or 8-inch whole wheat tortillas<\/li>\r\n<li>Non-stick cooking spray<\/li>\r\n<li>Large cloth napkin or dish towel to keep tortillas warm<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>1. Combine all ingredients, except shrimp and oil, in medium mixing bowl. Season with salt and pepper.<\/p>\r\n<p>&nbsp;<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>2. Toss shrimp into marinade and refrigerate two hours.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>3.\u00a0Remove shrimp from marinade and let drain for 5 minutes. Drain vegetables from marinade through a large colander over a sauce pot.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>4.\u00a0Bring reserved marinade liquid to a boil, then reduce heat and simmer 5 minutes; set aside.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>5.\u00a0Heat large cast iron skillet over medium-high heat. Add half the oil to pan. Add shrimp and saut\u00e9 until lightly browned and cooked through.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>6.\u00a0Remove shrimp from pan and keep warm.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>7.\u00a0Add the other half of the oil to pan, followed by drained vegetables. Cook until onions are translucent, about 5 minutes.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>8.\u00a0Turn heat up to high and spread vegetables evenly throughout the pan. Vegetables will start to brown on the bottom of the pan.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>9.\u00a0Arrange shrimp over the vegetables and add reserved marinade.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>10.\u00a0Serve immediately with a side of your favorite guacamole and a plate of warmed whole wheat tortillas.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n\r\n\r\n\r\n<p class=\"wp-block-paragraph\"><strong>Warmed Whole Wheat Tortillas:<\/strong><\/p>\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>1.\u00a0Heat large skillet over medium-high heat. Lightly spray one side of each tortilla with non-stick cooking spray.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>2. Place tortilla, sprayed-side-down, into hot skillet. Cook until tortilla begins to expand, about one minute, then flip over and cook another minute.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>3. Place tortilla on large napkin. Repeat until all tortillas are cooked.
