{"id":689,"date":"2018-06-08T10:12:56","date_gmt":"2018-06-08T14:12:56","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=689"},"modified":"2024-06-04T10:42:22","modified_gmt":"2024-06-04T14:42:22","slug":"spiced-veal-cheek-ravioli-with-orange-butter-sauce","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/spiced-veal-cheek-ravioli-with-orange-butter-sauce\/","title":{"rendered":"Spiced Veal Cheek Ravioli With Orange Butter Sauce"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>2 lb Veal cheeks, trimmed<\/li>\r\n<li>1 cup (240 ml) Florida orange juice<\/li>\r\n<li>1 cup (240 ml) Florida tangerine juice<\/li>\r\n<li>2 cups (480 ml) Red wine<\/li>\r\n<li>\u00bc cup (60 ml) Red wine vinegar<\/li>\r\n<li>\u00bd cup Carrot, 1\u201d diced<\/li>\r\n<li>\u00bd cup Onion, 1\u201d diced<\/li>\r\n<li>\u00bd cup Celery, 1\u201d diced<\/li>\r\n<li>1 each Bay leaf<\/li>\r\n<li>1 Tbsp Thyme, fresh, chopped<\/li>\r\n<li>1\/3 tsp Cloves, ground<\/li>\r\n<li>\u00bc tsp Cinnamon, ground<\/li>\r\n<li>1\/3 tsp Allspice, ground<\/li>\r\n<li>1\/3 tsp Nutmeg, ground<\/li>\r\n<li>1 tsp Florida orange zest, chopped<\/li>\r\n<li>1 Tbsp Rosemary, fresh, chopped<\/li>\r\n<li>\u00bc cup Parmesan cheese, grated<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Ravioli:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 lb Prepared Pasta dough<\/li>\r\n<li>3 each Eggs<\/li>\r\n<li>1 cup Flour<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Orange Butter Sauce:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 cup (240 ml) Florida orange juice<\/li>\r\n<li>\u00bd cup (120 ml) Braising liquid (reserved, see steps 1 and 2)<\/li>\r\n<li>3 Tbsp Butter<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 1:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Place veal cheeks in ovenproof casserole dish with lid. Combine Florida orange and tangerine juices, red wine, red wine vinegar, carrot, onion, celery, bay leaf, thyme, cloves, cinnamon, allspice and nutmeg and pour over veal cheeks.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 2:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Cover and cook in a 325\u00b0F oven for 3 hours, until veal cheeks are fork tender.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 3:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Remove cheeks from braising liquid and reserve. Strain braising liquid and discard vegetables.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 4:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Bring braising liquid to simmer and reduce volume by 2\/3. Reserve \u00bd cup braising liquid on the side.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 5:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>To prepare filling: Pull meat apart into small pieces. Pour all but reserved \u00bd cup of braising liquid over veal cheek meat.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 6:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Add Florida orange zest, rosemary and Parmesan cheese. Mix well and chill until firm.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 7:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>To prepare Ravioli: Roll out pasta dough into sheets. Cut into 3\u201d squares.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 8:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Place small spoon of filling in center of each square.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 9:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Brush edges with egg wash and fold over, pressing tightly to seal. Place on flat tray dusted with flour and cover tightly until ready to cook.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 10:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>\u00a0Bring large pot of salted water to boil. Poach raviolis for 4-5 minutes, depending on thickness of pasta dough.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 11:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>\u00a0While Raviolis are cooking, prepare Orange Butter Sauce: Combine Florida orange juice and reserved braising liquid in medium saucepot and bring to simmer.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 12:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Reduce volume by 2\/3 and stir in butter until melted.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 13<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>To serve, remove Raviolis from water and drain well. Toss with Orange Butter Sauce and place on plate.
