{"id":606,"date":"2018-06-07T14:21:03","date_gmt":"2018-06-07T18:21:03","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=606"},"modified":"2024-06-04T11:33:14","modified_gmt":"2024-06-04T15:33:14","slug":"shredded-chicken-soft-tacos-with-orange-chipotle-sauce-zesty-salsa","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/shredded-chicken-soft-tacos-with-orange-chipotle-sauce-zesty-salsa\/","title":{"rendered":"Shredded Chicken Soft Tacos With Orange Chipotle Sauce Zesty Salsa"},"content":{"rendered":"\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>2 bone\u2013in chicken breasts<\/li>\r\n<li>\u00bd cup (125 ml) plus 1 tablespoon Florida orange juice, divided<\/li>\r\n<li>2 chipotle chiles in adobo sauce<\/li>\r\n<li>1 cup sour cream<\/li>\r\n<li>2 ripe tomatoes, diced<\/li>\r\n<li>1 Florida orange, segmented, chopped, seeded<\/li>\r\n<li>\u00bd cup fresh cilantro, chopped<\/li>\r\n<li>\u00bc cup white onion, diced<\/li>\r\n<li>\u00bd jalape\u00f1o, diced<\/li>\r\n<li>Juice of 1 lime<\/li>\r\n<li>1 tablespoon white vinegar<\/li>\r\n<li>Salt<\/li>\r\n<li>Pepper<\/li>\r\n<li>6 (6-inch) flour tortillas<\/li>\r\n<li>Shredded Romaine or iceberg lettuce<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Place chicken breasts in saucepan; cover with water. Add \u00bd cup orange juice; bring to a boil. Reduce heat; simmer for 25 minutes or until chicken is thoroughly cooked. Remove chicken; cool. Remove cooked chicken; discard skin and bones. Shred chicken; reserve.<\/p>\r\n<p>In food processor, place chipotle peppers and remaining 1 tablespoon orange juice.\u00a0 Pulse 3 to 5 times to break up peppers. Add sour cream and pulse to combine. Refrigerate until ready to use.<\/p>\r\n<p>In mixing bowl, combine tomato, orange segments, cilantro, onion, jalape\u00f1o pepper, lime juice and white vinegar. Season to taste with salt and pepper; reserve.<\/p>\r\n<p>Heat large frying pan over medium-high heat. Carefully toast tortillas one at a time in dry pan for about 3 minutes per side, using tongs to move tortilla around in small circles so it does not burn. Keep tortillas warm. Fill toasted tortillas with shredded chicken and lettuce.
