{"id":598,"date":"2018-06-07T13:50:12","date_gmt":"2018-06-07T17:50:12","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=598"},"modified":"2024-06-04T11:36:50","modified_gmt":"2024-06-04T15:36:50","slug":"roasted-chicken-and-florida-orange-harvest-salad","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/roasted-chicken-and-florida-orange-harvest-salad\/","title":{"rendered":"Roasted Chicken and Florida Orange Harvest Salad"},"content":{"rendered":"\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<p><strong>For Orange Harvest Salad:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>1 cup (240 ml) Florida orange juice<\/li>\r\n<li>1 cup Florida orange segments<\/li>\r\n<li>2 cups celery root, cut into julienne<\/li>\r\n<li>\u00bc cup sour cream<\/li>\r\n<li>\u00bd cup parsley, minced, divided<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>For Red Walnut Mixture:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>1 cup red walnuts, toasted, coarsely chopped*<\/li>\r\n<li>\u00bc cup shallot, minced<\/li>\r\n<li>1\/3 cup extra virgin olive oil<\/li>\r\n<li>Salt to taste<\/li>\r\n<li>Pepper to taste<\/li>\r\n<li>6 (4-ounce) boneless skinless chicken breast<\/li>\r\n<li>Parsley sprigs, if desired<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Prepare Florida Harvest Salad:\u00a0 Combine Florida Orange Juice, Florida Orange Segments, celery root, sour cream and \u00bc cup chopped parsley in medium bowl; toss to combine. Refrigerate.<\/p>\r\n<p>Prepare Red Walnut Mixture:\u00a0 Combine walnuts, shallot, \u00bc cup parsley and olive oil in small bowl; toss to combine. Season with salt and pepper to taste.<\/p>\r\n<p>Preheat oven to 350\u00b0F. Place chicken breasts on sheet pan lined with parchment paper. Cook in oven for 35 minutes or until internal temperature reaches 165\u00b0F. Remove from oven and cool.<\/p>\r\n<p>To serve:\u00a0 Slice chicken breast on the bias. Fan slices on plate. Spoon Florida Orange Harvest Salad alongside chicken breast slices. Spoon Red Walnut Mixture on top of chicken breast slices.
