Remove and let cool.<\/p>\r\n<p>For oven, preheat to 450 degrees. Season the cavity of the chicken with salt and pepper.\u00a0 Tie legs together to hold shape; tuck wings under body. Place chicken in roasting pan. Roast chicken 20 minutes. Reduce oven temperature to 375 degrees. Continue roasting for about 1 hour 20 minutes or until internal temperature reaches 165 degrees.
