{"id":578,"date":"2018-06-07T13:14:20","date_gmt":"2018-06-07T17:14:20","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=578"},"modified":"2024-06-04T11:49:40","modified_gmt":"2024-06-04T15:49:40","slug":"orange-marmalade","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/orange-marmalade\/","title":{"rendered":"Orange Marmalade"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>4 medium Florida oranges\u00a0<\/li>\r\n<li>1 medium lemon<\/li>\r\n<li>1-1\/2\u00a0 cups water<\/li>\r\n<li>1\/8 teaspoon baking soda<\/li>\r\n<li>5 cups sugar<\/li>\r\n<li>1\/2 (6-ounce) package liquid fruit pectin, about 1 foil pouch (Look<\/li>\r\n<li>for pectin in the canning supplies area of the supermarket)\u00a0<\/li>\r\n<li>5\u00a0 to 6 glass half-pint canning jars<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Using a paring knife, score the peels of the oranges and lemon into 4 sections lengthwise. Remove the peels; scrape off the white pith. Cut peels into very thin strips. In a saucepan combine peels, water\u00a0 and baking soda; bring to boiling. Reduce heat; cover and simmer 20 minutes. Do not drain.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Meanwhile, section the peeled oranges and lemon over a bowl to catch the juice (discard seeds). Add fruit sections and reserved juice to saucepan; return to boiling. Reduce heat; cover and simmer 10 minutes or until thick.\u00a0 In an 8- to 10-quart Dutch oven combine 3 cups of the fruit mixture plus sugar. Bring to a full rolling boil. Quickly stir in pectin; return to boiling; cook and stir, uncovered, 1 minute. Remove from heat; skim off foam. Immediately ladle mixture evenly\u00a0 into hot, sterilized half-pint jars,\u00a0 leaving a 1\/4-inch head-space. Adjust\u00a0 lids. Process in a boiling-water canner\u00a0 15 minutes. Remove and let cool overnight.
