{"id":517,"date":"2018-06-07T11:07:31","date_gmt":"2018-06-07T15:07:31","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=517"},"modified":"2024-06-04T12:35:13","modified_gmt":"2024-06-04T16:35:13","slug":"orange-chicken-roll-ups","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/orange-chicken-roll-ups\/","title":{"rendered":"Orange Chicken Roll Ups"},"content":{"rendered":"\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>4 tablespoons unsalted butter, softened<\/li>\r\n<li>Zest of 1 Florida navel orange<\/li>\r\n<li>1\/8 teaspoon garlic powder<\/li>\r\n<li>5 boneless chicken cutlets, pounded to 1\/4-inch thickness<\/li>\r\n<li>Freshly ground black pepper<\/li>\r\n<li>1 cup fresh green beans, cooked<\/li>\r\n<li>3\/4 cup shredded carrots<\/li>\r\n<li>1 cup seasoned whole wheat breadcrumbs<\/li>\r\n<li>3 tablespoons vegetable oil<\/li>\r\n<li>1 cup (240 ml) Florida orange juice<\/li>\r\n<li>1\/4 cup cold water<\/li>\r\n<li>1\/4 teaspoon cornstarch<\/li>\r\n<li>Florida orange slices for garnish<\/li>\r\n<li>Fresh cilantro for garnish<\/li>\r\n<li>Toothpicks<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Preheat oven to 350 degrees. Combine butter, orange zest and garlic powder in small bowl. Divide butter mixture among 5 chicken cutlets; spread each cutlet with butter mixture (butter will not cover cutlet completely) and sprinkle with black pepper. Place approximately 4 green beans horizontally on top of each cutlet and sprinkle with shredded carrots. Roll up cutlets and secure with toothpicks. Place breadcrumbs in flat dish; roll cutlets in breadcrumbs to coat.<\/p>\r\n<p>Heat vegetable oil in oven-safe skillet over medium high heat; lightly brown cutlets on all sides. Add 1 cup orange juice and bring to a boil. Cover skillet with foil; place skillet in oven and bake for 8 minutes. Turn cutlets and cook for additional 7 minutes or until chicken is cooked through and no pink remains. Remove skillet from oven. Remove cutlets from skillet; place on serving platter and keep warm.<\/p>\r\n<p>Place skillet on stove over medium heat. Boil liquid for 3 minutes, scraping the bottom of the pan with a wooden spoon. Combine cold water and cornstarch; add to skillet and cook over medium heat, stirring frequently, for 2 minutes or until thickened. Remove toothpicks from cutlets; pour sauce over cutlets.
