{"id":500,"date":"2018-06-07T10:48:56","date_gmt":"2018-06-07T14:48:56","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=500"},"modified":"2024-06-04T12:50:58","modified_gmt":"2024-06-04T16:50:58","slug":"orange-caesar-salad-recipe","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/orange-caesar-salad-recipe\/","title":{"rendered":"Orange Caesar Salad Recipe"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>2 teaspoons anchovy paste<\/li>\r\n<li>1\/4 cup Dijon mustard<\/li>\r\n<li>1\/4 cup finely chopped garlic, divided<\/li>\r\n<li>1-1\/2 (1.5 litres) quarts Florida Orange Juice*, divided<\/li>\r\n<li>1-1\/2 cups olive oil<\/li>\r\n<li>3 cups (720 ml) Florida grapefruit juice<\/li>\r\n<li>1\/2 cup lime juice<\/li>\r\n<li>2 teaspoons Old Bay\u00ae Seasoning<\/li>\r\n<li>96 Peeled and deveined 21\/25 count shrimp (2-1\/2 pounds)<\/li>\r\n<li>48 cups cleaned and cut Romaine lettuce, 1\u2033x1\u2033 (3 pounds)<\/li>\r\n<li>6 cups seasoned croutons<\/li>\r\n<li>1 quart Florida orange sections (2-1\/4 pounds)<\/li>\r\n<li>3\/4 cup grated Parmesan cheese<br \/>*May substitute Florida orange juice from concentrate<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">TO PREPARE THE DRESSING:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>1. Combine the anchovy paste, mustard and 1 tablespoon of garlic in a food processor; puree until smooth.<\/p>\r\n<p>2. While the processor is running, slowly add 2 cups of the Florida orange juice followed by the olive oil; mix until incorporated, cover and refrigerate.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">TO PREPARE THE MARINADE:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>1. Combine the Florida grapefruit juice, lime juice, Old Bay\u00ae Seasoning, remaining garlic and remaining Florida orange juice; reserve. <\/p>\r\n<p>2. Place eight shrimp on each of 12 skewers and marinate in the refrigerator for four hours. Discard the marinade, cover and refrigerate the shrimp until needed.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">TO PREPARE EACH SALAD:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>1. Grill one shrimp skewer (2-3 minutes per side), and keep warm. Toss 4 cups of lettuce with 1\/4 cup of dressing and place the greens on a plate. <\/p>\r\n<p>2.
