{"id":493,"date":"2018-06-07T10:32:13","date_gmt":"2018-06-07T14:32:13","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=493"},"modified":"2024-06-04T12:54:02","modified_gmt":"2024-06-04T16:54:02","slug":"orange-mediterranean-chicken","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/orange-mediterranean-chicken\/","title":{"rendered":"Orange Mediterranean Chicken"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>4 teaspoons pine nuts, toasted and chopped<\/li>\r\n<li>1 pound skinless chicken breast, boned and trimmed<\/li>\r\n<li>2 tablespoons all-purpose flour, for dusting chicken<\/li>\r\n<li>Canola Oil Spray<\/li>\r\n<li>1\/4 cup minced shallots, or red onion<\/li>\r\n<li>1\/4 cup chopped roasted red peppers<\/li>\r\n<li>2 tablespoons chopped capers<\/li>\r\n<li>2 tablespoons chopped olives<\/li>\r\n<li>2 tablespoons chopped raisins<\/li>\r\n<li>3\/4 cup (180 ml) 100 percent Florida orange juice*<\/li>\r\n<li>1 tablespoon fresh lemon juice<\/li>\r\n<li>1 cup low-sodium chicken stock<\/li>\r\n<li>1\/2 teaspoon salt, plus more to taste<\/li>\r\n<li>1\/4 teaspoon black pepper, plus more to taste<\/li>\r\n<li>2 tablespoons fresh chopped parsley<br \/>*May substitute Florida Orange Juice from Concentrate<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 1:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Toast pine nuts in a 350 degree oven for 3-4 minutes until golden. Remove, cool and chop.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 2:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>With a meat mallet, pound chicken breasts to 1\/2-inch thick and season with salt and pepper.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 3:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Dust both sides in flour, and pat so flour stays on.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 4:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Heat saut\u00e9 pan and coat with canola oil spray. Place chicken in hot saut\u00e9 pan and spray uncooked side of chicken with canola oil in the pan. Sear chicken for one minute on both sides, and remove from pan.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 5:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>In the same saut\u00e9 pan, add shallots and saut\u00e9 briefly. Add roasted red peppers, capers, olives and raisins and saut\u00e9 briefly until shallots are translucent.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 6:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Deglaze pan with orange juice.
