{"id":481,"date":"2018-06-07T10:06:17","date_gmt":"2018-06-07T14:06:17","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=481"},"modified":"2024-06-04T13:03:12","modified_gmt":"2024-06-04T17:03:12","slug":"orange-black-bean-burrito","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/orange-black-bean-burrito\/","title":{"rendered":"Orange Black Bean Burrito"},"content":{"rendered":"\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 tablespoon olive oil<\/li>\r\n<li>\u00bd cup yellow onion, diced<\/li>\r\n<li>2 garlic cloves, minced<\/li>\r\n<li>1 (8 to 10-ounce) can black beans, drained<\/li>\r\n<li>\u00bd cup (120 ml) Florida orange juice<\/li>\r\n<li>1 tablespoon lime juice<\/li>\r\n<li>1 teaspoon brown sugar<\/li>\r\n<li>1 teaspoon chili powder<\/li>\r\n<li>6 flour tortillas<\/li>\r\n<li>1 cup Monterey jack cheese, shredded<\/li>\r\n<li>\u00bd cup mozzarella, shredded<\/li>\r\n<li>Iceberg or romaine lettuce, shredded<\/li>\r\n<li>1 cup fresh cilantro, chopped<\/li>\r\n<li>Salsa<\/li>\r\n<li>Guacamole<\/li>\r\n<li>Low fat sour cream or Greek yogurt<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>In saucepan, heat olive oil over medium heat.\u00a0 Add onions and garlic; saut\u00e9 for 3 to 4 minutes. Add black beans, orange juice, lime juice, brown sugar and chili powder; stir to combine. Simmer for 5 minutes; remove from heat.<\/p>\r\n<p>Heat large nonstick skillet over medium-high heat. Place tortillas on counter; sprinkle evenly with shredded cheeses. Top each tortilla with one- half cup bean mix, shredded lettuce and cilantro.\u00a0 Fold two sides in; then fold over the front edge and roll up and place flap side down into the hot pan.\u00a0 Cook for 2 to 3 minutes on each side until golden brown and slightly crispy.
