{"id":478,"date":"2018-06-07T09:58:59","date_gmt":"2018-06-07T13:58:59","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=478"},"modified":"2024-06-04T13:03:58","modified_gmt":"2024-06-04T17:03:58","slug":"orange-apricot-chicken-tagine","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/orange-apricot-chicken-tagine\/","title":{"rendered":"Orange Apricot Chicken Tagine"},"content":{"rendered":"\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 tablespoon canola oil<\/li>\r\n<li>4 small skinless chicken breasts, approximately 4 ounces each<\/li>\r\n<li>1 yellow onion, sliced<\/li>\r\n<li>1 tablespoon minced fresh garlic<\/li>\r\n<li>1 tablespoon minced fresh ginger<\/li>\r\n<li>1 cup (240 ml) Florida orange juice<\/li>\r\n<li>1 tablespoon turmeric<\/li>\r\n<li>1 teaspoon ground nutmeg<\/li>\r\n<li>1 teaspoon ground cinnamon<\/li>\r\n<li>1 saffron thread, optional<\/li>\r\n<li>1 (15-ounce) can garbanzo beans, drained<\/li>\r\n<li>1 cup dried apricots<\/li>\r\n<li>1 cup diced fresh tomatoes<\/li>\r\n<li>1\/2 cup cashews, chopped and toasted<\/li>\r\n<li>2 tablespoons fresh cilantro, chopped<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Heat oil in tagine and brown chicken breasts for 3 to 5 minutes; remove chicken breasts and reserve. Add onion, garlic and ginger to tagine; saut\u00e9 for 3 minutes. Add orange juice, turmeric, nutmeg, cinnamon and saffron, if desired. Simmer for 3 minutes; do not boil. Add garbanzo beans, apricots and tomatoes. Bring to simmer; add reserved chicken breasts. Cover tagine and cook for 20 to 30 minutes over low heat until chicken is thoroughly cooked.
