{"id":472,"date":"2018-06-07T09:36:22","date_gmt":"2018-06-07T13:36:22","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=472"},"modified":"2024-06-04T13:06:17","modified_gmt":"2024-06-04T17:06:17","slug":"mahi-mahi-recipe-with-charred-orange-citrus-coleslaw","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/mahi-mahi-recipe-with-charred-orange-citrus-coleslaw\/","title":{"rendered":"Mahi Mahi Recipe With Charred Orange Citrus Coleslaw"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 cup (240 ml) Florida Orange Juice<\/li>\r\n<li>8 each Florida Oranges, sliced in half<\/li>\r\n<li>3 teaspoons Olive oil<\/li>\r\n<li>1\/4 cup Shallots, minced<\/li>\r\n<li>1\/2 cup White wine<\/li>\r\n<li>1\/2 cup Heavy cream<\/li>\r\n<li>1 stick Butter, unsalted, room temperature<\/li>\r\n<li>4 each Mahi-mahi, cut into 6-oz. pieces<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Slaw:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 cup Florida Oranges, segmented<\/li>\r\n<li>1\/2 cup Florida Grapefruits, segmented<\/li>\r\n<li>1\/2 cup Red cabbage, thinly shaved<\/li>\r\n<li>1\/2 cup Napa cabbage, thinly shaved<\/li>\r\n<li>1\/2 cup Orange bell pepper, thin strips<\/li>\r\n<li>Salt<\/li>\r\n<li>Pepper<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Using a grill pan over high heat, char the oranges that have been cut in half. Once charred, remove and set aside. In a 1-quart saucepan, reduce the orange juice to 1\/4 cup. Allow to cool. In a separate 1-quart saucepan, add 1 teaspoons olive oil and minced shallots. Cook until translucent, approximately 1\u20132 minutes. Add the white wine and reduce until almost dry. Add the heavy cream and reduce by half. Squeeze 4 of the charred oranges into the heavy cream and reduce for another 2 minutes. Whisk in the butter and set aside over a warm water bath.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>In a stainless steel bowl, combine the cooled reduced orange juice with the slaw ingredients. Season with 1\/4 teaspoon salt, mix and keep cool.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>In a saut\u00e9 pan over medium high heat, add 2 teaspoons olive oil; allow the oil to come up to its smoke point. Season the mahi-mahi with salt and pepper; sear flesh-side-down for 1 minute. Turn the fish, reduce the heat and cook until the fish is fully cooked, 4\u20135 minutes. Place the fish on the plate. Equally portion the citrus slaw over the top.
