{"id":431,"date":"2018-06-06T14:29:02","date_gmt":"2018-06-06T18:29:02","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=431"},"modified":"2024-06-04T13:27:38","modified_gmt":"2024-06-04T17:27:38","slug":"jerk-chicken-skewers-with-fried-plantains","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/jerk-chicken-skewers-with-fried-plantains\/","title":{"rendered":"Jerk Chicken Skewers with Fried Plantains"},"content":{"rendered":"\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>3 pounds chicken thighs, cut into 1-inch cubes<\/li>\r\n<li>18 (6-inch) wooden skewers<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>For Florida Orange Marinade:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>1\/4 cup (60 ml) Florida orange juice<\/li>\r\n<li>1 tablespoon lime juice<\/li>\r\n<li>1 tablespoon jerk seasoning<\/li>\r\n<li>1 teaspoon ginger, minced<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>For Florida Orange Mango Chutney:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>1\/2 cup (120 ml) Florida orange juice<\/li>\r\n<li>3 tablespoons rice vinegar<\/li>\r\n<li>2 tablespoons sugar<\/li>\r\n<li>1 bay leaf<\/li>\r\n<li>2 cups mango, cut into 1\/2-inch diced<\/li>\r\n<li>1\/4 cup red onion, cut into 1\/2-inch dice<\/li>\r\n<li>1\/4 cup red bell pepper, cut into 1\/2-inch dice<\/li>\r\n<li>2 tablespoons minced jalape\u00f1o pepper<\/li>\r\n<li>1 teaspoon minced ginger<\/li>\r\n<li>1\/2 teaspoon Florida orange zest<\/li>\r\n<li>1 tablespoon cilantro, chopped<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>For Fried Plantains:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>2 yellow plantains, peeled, cut into 1\/2-inch slices<\/li>\r\n<li>1\/2 cup flour<\/li>\r\n<li>1\/4 cup canola oil<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Thread chicken cubes onto skewers; place in non-metallic baking dish.<\/p>\r\n<p>Prepare Florida Orange Marinade; Combine all ingredients in bowl; mix thoroughly. Pour marinade over chicken skewers; cover and refrigerate at least 3 hours or preferably overnight.<\/p>\r\n<p>Prepare Florida Orange Mango Chutney; Combine orange juice, vinegar, sugar and bay leaf in a medium saucepan; simmer over medium heat until liquid is reduced by half. Add mango, red onion, red bell pepper, jalape\u00f1o pepper, ginger and orange zest; continue simmering until most of the liquid is evaporated. Cool; add cilantro and reserve.<\/p>\r\n<p>Prepare Fried Plantains; Dust plantain slices with flour. Heat canola oil in saut\u00e9 pan over medium heat; saut\u00e9 plantains until golden brown on both sides. Remove to plate lined with paper towels to drain excess oil.<\/p>\r\n<p>Remove chicken skewers from marinade; discard marinade. Grill chicken skewers over medium high heat until cooked through.
