{"id":372,"date":"2018-06-06T12:27:15","date_gmt":"2018-06-06T16:27:15","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=372"},"modified":"2024-06-04T13:56:22","modified_gmt":"2024-06-04T17:56:22","slug":"florida-oj-smoked-whitefish-and-wild-rice-chowder","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/florida-oj-smoked-whitefish-and-wild-rice-chowder\/","title":{"rendered":"Florida OJ Smoked Whitefish and Wild Rice Chowder"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>2 cups (480 ml) Florida Orange\u00a0Juice<\/li>\r\n<li>Florida Orange Zest, for garnish<\/li>\r\n<li>2 cups vegetable stock<\/li>\r\n<li>1 cup white wine<\/li>\r\n<li>4 tablespoons butter, divided<\/li>\r\n<li>1 tbsp. garlic, chopped<\/li>\r\n<li>2 cups leeks, chopped<\/li>\r\n<li>1\/2 cup flour<\/li>\r\n<li>12 oz. smoked whitefish, cleaned, cut into 1-inch pieces<\/li>\r\n<li>2 cups potatoes, chopped<\/li>\r\n<li>1 cup cooked wild rice<\/li>\r\n<li>1 cup (240 ml) heavy cream<\/li>\r\n<li>1 tbsp.\u00a0fresh thyme, chopped<\/li>\r\n<li>1 bay leaf<\/li>\r\n<li>3 tbsp. parsley<\/li>\r\n<li>1 tbsp.\u00a0lemon juice<\/li>\r\n<li>Fresh dill, for garnish<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Combine Florida Orange Juice, vegetable stock and white wine in saucepan; bring to simmer. Remove from heat; keep warm.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>In large saucepan, cook 2 tbsp. butter and garlic over medium heat for 1 to 2 minutes, until butter is melted; do not brown garlic. Add leeks and cook until tender. Add remaining 2 tbsp. butter; cook until melted. Sprinkle flour over leeks and stir until flour and butter are combined to make a roux.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Add Florida Orange Juice\u00a0mixture to leek mixture, one-third at a time, stirring well to incorporate before each addition. Add smoked whitefish, potatoes, wild rice, heavy cream, thyme and bay leaf; simmer over low heat for 20 to 25 minutes, until potatoes are tender. Remove bay leaf. Add parsley and lemon juice; serve immediately.
