{"id":360,"date":"2018-06-06T12:13:52","date_gmt":"2018-06-06T16:13:52","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=360"},"modified":"2024-06-04T14:03:58","modified_gmt":"2024-06-04T18:03:58","slug":"florida-citrus-red-snapper-with-orange-thai-chile-sauce","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/florida-citrus-red-snapper-with-orange-thai-chile-sauce\/","title":{"rendered":"Florida Citrus Red Snapper with Orange Thai Chile Sauce"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>10 Florida Orange Slices, 1\/4-inch thick, divided<\/li>\r\n<li>\u00bd cup Florida Orange Zest, thinly sliced<\/li>\r\n<li>3 lbs. kosher salt<\/li>\r\n<li>8 egg whites, whipped to soft peaks<\/li>\r\n<li>1 red snapper (4-5 lbs.), whole, descaled<\/li>\r\n<li>12 fresh tarragon sprigs, divided<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>For Thai Chile\u2013Orange Sauce:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>3 cups (720 ml) Florida Orange Juice<\/li>\r\n<li>1\/3 cup soy sauce<\/li>\r\n<li>1\/3 cup mirin<\/li>\r\n<li>1\/3 cup rice wine vinegar<\/li>\r\n<li>4 Thai chiles, seeded, minced<\/li>\r\n<li>\u00bd cup green onions, minced<\/li>\r\n<li>\u00bc cup fresh ginger, minced<\/li>\r\n<li>\u00bc cup brown sugar<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 1:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Preheat oven to 350\u00b0 F.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 2:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Combine salt, egg whites and orange zest in large bowl; stir until completely mixed.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 3:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Line large roasting pan with parchment paper. Create a 1\/4-inch-thick layer of the salt mixture large enough for the entire snapper to lay on. Place snapper on salt mixture. Stuff the cavity with 4 orange slices and 6 tarragon sprigs.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 4:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Cover the snapper with the remaining salt mixture, pressing salt mixture firmly on top of fish and sealing all edges. Bake for 35 minutes.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 5:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Prepare Thai Chile\u2013Orange Sauce: Place Florida Orange Juice in saucepan; cook over medium heat and reduce to 1 cup. Remove from heat; cool. Stir in remaining ingredients; reserve sauce.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 6:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>To serve fish, slide spatula under parchment paper and carefully transfer whole fish to serving platter. Cut through salt crust with paring knife around entire perimeter; remove top layer of salt crust.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 7:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Place portions of snapper on individual serving plates; garnish with remaining Florida Orange Slices and tarragon sprigs.
