{"id":346,"date":"2018-06-06T11:55:07","date_gmt":"2018-06-06T15:55:07","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=346"},"modified":"2024-06-04T14:11:58","modified_gmt":"2024-06-04T18:11:58","slug":"florida-orange-risotto-arancini-with-florida-citrus-tomato-sauce","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/florida-orange-risotto-arancini-with-florida-citrus-tomato-sauce\/","title":{"rendered":"Florida Orange Risotto Arancini With Florida Citrus Tomato Sauce"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>\u00bd cup onion, minced<\/li>\r\n<li>1 tablespoon olive oil<\/li>\r\n<li>1 cup \u00a0Arborio risotto rice<\/li>\r\n<li>2 cups (480 ml) Florida orange juice<\/li>\r\n<li>3 cups chicken stock (or vegetable stock)<\/li>\r\n<li>1 cup white wine<\/li>\r\n<li>1 bay leaf<\/li>\r\n<li>Salt and pepper to taste<\/li>\r\n<li>\u00bd cup Parmesan cheese<\/li>\r\n<li>1 cup \u00a0fresh mozzarella cheese, cut in \u00bd-inch cubes<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>For Breading &amp; Cooking:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>2 cups flour<\/li>\r\n<li>6 eggs, beaten<\/li>\r\n<li>4 cups breadcrumbs<\/li>\r\n<li>2 quarts olive oil<\/li>\r\n<li>Salt and pepper to taste<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Florida Citrus Tomato Sauce:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>\u00bd cup onion, diced in \u00bd-inch cubes<\/li>\r\n<li>1 tablespoon garlic, diced<\/li>\r\n<li>1 tablespoon olive oil<\/li>\r\n<li>\u00bd cup (120 ml) Florida grapefruit juice<\/li>\r\n<li>\u00bd cup (120 ml) Florida orange juice<\/li>\r\n<li>\u00bd cup (120 ml) Florida tangerine juice<\/li>\r\n<li>2 cups peeled whole tomatoes<\/li>\r\n<li>\u00bc cup \u00a0fresh basil leaves<\/li>\r\n<li>1 teaspoon Florida orange zest<\/li>\r\n<li>Salt and pepper to taste<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Cook onions in olive oil over low heat in stockpot until tender. Add Arborio rice; cook 3-4 minutes while stirring constantly. Add Florida orange juice, chicken stock, white wine, bay leaf and salt and pepper to taste; cook over medium heat, stirring constantly until rice absorbs all liquid. Stir in Parmesan and season with additional salt to taste. Remove bay leaf; pour risotto into a dish; cover and refrigerate until cool.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Form cooled risotto into 1\u00bd-inch balls. Use thumb to make dimple in middle of ball; insert piece of mozzarella into dimple, then roll rice around cheese. Refrigerate risotto balls until firm.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>To make Florida Citrus Tomato Sauce:\u00a0 Saut\u00e9 onions and garlic in olive oil in large saucepan until tender. Add Florida grapefruit, orange and tangerine juices and tomatoes; cook for 45 minutes. Remove from heat. Add basil and Florida orange zest and basil leaves to tomato sauce; pur\u00e9e with food mill or press through sieve. Season with salt and pepper to taste.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Roll risotto balls in flour; dip in egg mixture, then coat with breadcrumbs. Heat olive oil in 6-quart stockpot over medium-low heat to 350\uf0b0F. Fry risotto balls in batches until golden brown; remove balls with slotted spoon\u00a0 to a plate lined with paper towels to drain excess oil.
