{"id":3346,"date":"2021-09-27T20:57:49","date_gmt":"2021-09-28T00:57:49","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=3346"},"modified":"2024-06-03T17:16:47","modified_gmt":"2024-06-03T21:16:47","slug":"sweet-potato-vegetarian-wellington-with-mushroom-duxelle-2","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/sweet-potato-vegetarian-wellington-with-mushroom-duxelle-2\/","title":{"rendered":"Sweet Potato Vegetarian Wellington with Mushroom Duxelle"},"content":{"rendered":"\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 cup (240 ml) Florida Orange Juice, divided<\/li>\r\n<li>4 tbsp. olive oil, divided<\/li>\r\n<li>2 cups button mushrooms, minced<\/li>\r\n<li>\u00bd cup shallots, minced<\/li>\r\n<li>6 tbsp. unsalted butter, divided<\/li>\r\n<li>Salt and white pepper to taste<\/li>\r\n<li>\u00bd cup green squash, minced<\/li>\r\n<li>1 tsp. chili flakes<\/li>\r\n<li>4 sheets puff pastry<\/li>\r\n<li>4 sweet potatoes, \u00be baked, peeled<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<p>1. In a large rondeau over high heat, add 2 tablespoons olive oil and the mushrooms. Cook until the mushrooms are caramelized, approximately 12 to 14 minutes.<\/p>\r\n\r\n\r\n\r\n<p>2. Add the shallots and 4 tablespoons of butter and cook for another 3 to 4 minutes. Season with salt and white pepper. Place the mixture on a sheet pan lined with parchment paper and allow to cool.<\/p>\r\n\r\n\r\n\r\n<p>3. Without cleaning the rondeau, add 2 tablespoons olive oil over high heat. Add the green squash and saut\u00e9 until golden brown. Add the chili flakes and \u00bd cup of Florida Orange Juice.<\/p>\r\n\r\n\r\n\r\n<p>4. Reduce until almost dry, add to the mushroom mixture, and let cool.<\/p>\r\n\r\n\r\n\r\n<p>5. Preheat oven to 350\u00ba F.<\/p>\r\n\r\n\r\n\r\n<p>6. In a small pot, reduce the remaining \u00bd cup of Florida Orange Juice by half and whisk in 2 tablespoons butter. Keep warm.<\/p>\r\n\r\n\r\n\r\n<p>7. When the mushroom, shallot and green squash mixture has completely cooled, lay each individual puff pastry sheet on a parchment-lined sheet pan.<\/p>\r\n\r\n\r\n\r\n<p>8. Spread the mixture equally over the entire puff pastry sheet, leaving \u2153 inch around each edge.<\/p>\r\n\r\n\r\n\r\n<p>9. Place the sweet potatoes into the middle of each puff pastry sheet and roll the puff pastry around the potatoes, sealing the pastry shut.<\/p>\r\n\r\n\r\n\r\n<p>10. Bake in the oven for 20 minutes or until the puff pastry is golden brown.<\/p>\r\n\r\n\r\n\r\n<p>11. Spoon the butter and Florida Orange Juice reduction around the edge of each puff pastry.
