{"id":329,"date":"2018-06-06T11:35:14","date_gmt":"2018-06-06T15:35:14","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=329"},"modified":"2024-06-04T14:19:43","modified_gmt":"2024-06-04T18:19:43","slug":"orange-and-beer-steamed-mussels","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/orange-and-beer-steamed-mussels\/","title":{"rendered":"Orange and Beer Steamed Mussels"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>2 quarts olive oil<\/li>\r\n<li>2 russet potatoes, peeled, cut into \u00bc-inch julienne<\/li>\r\n<li>Salt to taste<\/li>\r\n<li>2 tablespoons olive oil<\/li>\r\n<li>2 tablespoons shallots, minced<\/li>\r\n<li>1 tablespoon garlic, minced<\/li>\r\n<li>1 teaspoon jalape\u00f1o pepper, seeded<\/li>\r\n<li>3 pounds mussels, cleaned<\/li>\r\n<li>\u00bd cup (120 ml) Florida orange juice<\/li>\r\n<li>\u00bd cup tomato, diced into \u00bd-inch cubes<\/li>\r\n<li>\u00bd cup (120 ml) Pilsner beer<\/li>\r\n<li>2 tablespoons lemon juice<\/li>\r\n<li>Salt and pepper to taste<\/li>\r\n<li>2 tablespoons butter<\/li>\r\n<li>1 tablespoon fresh tarragon, chopped<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Pour olive oil into large 6-quart stockpot and heat over medium-low heat until it reaches 375\u00baF. Add potatoes and cook until golden brown and crispy. Remove from oil with strainer; drain on paper towels. Season with salt to taste.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Preheat large skillet over medium-high heat. Add olive oil; saut\u00e9 shallots, garlic, shallots and jalape\u00f1o until aromatic. Add mussels, Florida orange juice, tomato, beer and lemon juice. Season with salt and pepper to taste. Cover skillet; cook until mussels open fully.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Remove from heat; discard any unopened mussels. Add butter and tarragon to mussels; toss until butter is melted.
