{"id":326,"date":"2018-06-06T11:31:43","date_gmt":"2018-06-06T15:31:43","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=326"},"modified":"2024-06-14T12:54:38","modified_gmt":"2024-06-14T16:54:38","slug":"florida-oj-pickled-vegetables-with-toasted-cashew-vinaigrette","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/florida-oj-pickled-vegetables-with-toasted-cashew-vinaigrette\/","title":{"rendered":"Florida OJ Pickled Vegetables with Toasted Cashew Vinaigrette"},"content":{"rendered":"\r\n<div class=\"wp-block-buttons alignright is-layout-flex wp-block-buttons-is-layout-flex\">\r\n<div class=\"wp-block-button\"><a class=\"wp-block-button__link\" href=\"https:\/\/intl-floridacitrus.pantheonsite.io\/www-floridacitrus-quebec\/\/oj\/recipes\/legumes-marines-dans-le-jus-dorange-avec-vinaigrette-aux-noix-de-cajou-roties\/\" target=\"_blank\" rel=\"noreferrer noopener\">French<\/a><\/div>\r\n<\/div>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<p><strong>For Pickling Liquid:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>2 cups Florida Orange Juice<\/li>\r\n<li>1 cup water<\/li>\r\n<li>\u00be cup champagne vinegar<\/li>\r\n<li>\u00bc cup sugar<\/li>\r\n<li>3 tbsp. pickling spice<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>For Vegetables:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>2 Florida Oranges, peeled, cut into 1\/8-inch thick slices<\/li>\r\n<li>4 purple carrots, peeled into thin ribbons<\/li>\r\n<li>4 yellow carrots, peeled into thin ribbons<\/li>\r\n<li>4 orange carrots, peeled into thin ribbons<\/li>\r\n<li>4 watermelon radishes, thinly sliced<\/li>\r\n<li>1 head endive, thinly sliced<\/li>\r\n<li>1 pint daikon sprouts<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>For Toasted Cashew Vinaigrette:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>2 cups cashews, toasted, coarsely chopped<\/li>\r\n<li>\u00bc cup parsley, minced<\/li>\r\n<li>1 shallot, minced<\/li>\r\n<li>\u00bc cup champagne vinegar<\/li>\r\n<li>3 tbsp. extra virgin olive oil<\/li>\r\n<li>Salt to taste<\/li>\r\n<li>Pepper to taste<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>1. Prepare Pickling Liquid:\u00a0 Place all ingredients in saucepan; bring to a boil.<\/p>\r\n<p>2. Blanch carrot ribbons in pickling liquid one color at a time for 12 seconds; plunge in ice water, then place ribbons on paper towels. Repeat with remaining carrots.<\/p>\r\n<p>3. Blanch radish slices in pickling liquid for 15 seconds; plunge in ice water, then place slices on paper towels.<\/p>\r\n<p>4. Prepare Toasted Cashew Vinaigrette:\u00a0 Combine cashews, parsley, shallot, vinegar and olive oil in mixing bowl; toss to combine. Season with salt and pepper to taste; reserve.<\/p>\r\n<p>5. Arrange carrot ribbons, radish slices, orange slices and endive on plates. Sprinkle with sprouts.
