{"id":323,"date":"2018-06-06T11:24:03","date_gmt":"2018-06-06T15:24:03","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=323"},"modified":"2024-06-14T12:54:55","modified_gmt":"2024-06-14T16:54:55","slug":"florida-orange-vietnamese-pho-soup","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/florida-orange-vietnamese-pho-soup\/","title":{"rendered":"Florida Orange Vietnamese Pho Soup"},"content":{"rendered":"\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<p><strong>For Spice Sachet:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>3 star anise<\/li>\r\n<li>3 cloves<\/li>\r\n<li>2 cardamom<\/li>\r\n<li>1 cinnamon stick<\/li>\r\n<li>1 teaspoon coriander<\/li>\r\n<li>1 teaspoon fennel<\/li>\r\n<li>Cheesecloth<\/li>\r\n<li>Butcher twine<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>For Beef Broth:<\/strong>*<\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>5 pounds beef bones<\/li>\r\n\r\n\r\n\r\n<li>2 pounds beef stew meat<\/li>\r\n\r\n\r\n\r\n<li>Salt to taste<\/li>\r\n\r\n\r\n\r\n<li>Pepper to taste<\/li>\r\n\r\n\r\n\r\n<li>1 onion, cut into 1-inch dice<\/li>\r\n\r\n\r\n\r\n<li>1\/2 cup carrot, cut into 1-inch dice<\/li>\r\n\r\n\r\n\r\n<li>1\/2 cup celery, cut into 1-inch dice<\/li>\r\n\r\n\r\n\r\n<li>1\/2 cup red apple, cut into 1-inch dice<\/li>\r\n\r\n\r\n\r\n<li>1 (3-inch) piece fresh ginger root, minced<\/li>\r\n\r\n\r\n\r\n<li>1\/4 cup (60ml) Florida Orange Juice<\/li>\r\n\r\n\r\n\r\n<li>2 tablespoons lime juice<\/li>\r\n\r\n\r\n\r\n<li>2 tablespoons fish sauce**<\/li>\r\n\r\n\r\n\r\n<li>2 tablespoons soy sauce<\/li>\r\n\r\n\r\n\r\n<li>1 tablespoon sugar<\/li>\r\n\r\n\r\n\r\n<li>1 teaspoon hot bean paste (or sriracha sauce)**<\/li>\r\n\r\n\r\n\r\n<li>8 ounces rice noodles, flat<\/li>\r\n\r\n\r\n\r\n<li>1 cup carrots, cut into julienne strips<\/li>\r\n\r\n\r\n\r\n<li>1 cup cabbage, finely shredded<\/li>\r\n\r\n\r\n\r\n<li>3\/4 cup enoki mushrooms<\/li>\r\n\r\n\r\n\r\n<li>12 ounces cooked beef flank steak, thinly sliced<\/li>\r\n\r\n\r\n\r\n<li>1\/2 cup fresh cilantro, small leaves<\/li>\r\n\r\n\r\n\r\n<li>1\/2 cup fresh basil, small leaves<\/li>\r\n\r\n\r\n\r\n<li>1\/2 cup fresh mint, small leaves<\/li>\r\n\r\n\r\n\r\n<li>6 thin slices Florida oranges<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p>*Note: Can substitute 4 cups prepared beef broth.<br \/>**Available at Asian market or specialty store.<\/p>\r\n\r\n\r\n\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Prepare Spice Sachet; Combine spices in medium skillet; toast gently over medium heat, stirring constantly; remove from heat. Cut a square of cheesecloth. Place spices in center; fold into sachet and secure with butcher twine; reserve.<\/p>\r\n<p>Prepare Beef Broth; Place beef bones in large stockpot; cover with cold water. Bring to a simmer over medium heat. Remove from heat; drain and discard water; return bones to stockpot. Cover bones with 1 gallon of fresh cold water; bring to a low simmer. Skim surface of water with ladle to remove fat; discard. Continue to simmer for 1 1\/2 hours.<\/p>\r\n<p>After 1 hour, season beef stew meat with salt and pepper. Brown stew meat in large skillet over high heat; remove stew meat and reserve. Brown onions, carrots, celery, apple and ginger in skillet until medium brown; remove from heat and reserve. Add browned stew meat to stockpot; simmer for 1\/2 hour. Add browned vegetables and Spice Sachet. Simmer for an additional hour. Strain broth into a medium saucepot; remove and reserve stew meat; discard bones, vegetables and Spice Sachet.<\/p>\r\n<p>Add orange juice, lime juice, fish sauce, soy sauce, sugar and bean paste to beef broth. Season with salt and pepper; keep hot.<\/p>\r\n<p>Shred cooked, reserved stew meat into small pieces; set aside.<\/p>\r\n<p>Cook rice noodles in boiling water for 1 minute or until tender; drain and run under cold water until cool; reserve.<\/p>\r\n<p>Bring large pot of salted water to a boil; cook carrot strips for about 1 minute, or until tender. Plunge into bowl of cold water filled with ice cubes; remove carrots and drain; reserve. Repeat process with cabbage; reserve.<\/p>\r\n<p>To assemble, divide rice noodles, carrots, cabbage, mushrooms, sliced flank steak, shredded stew meat, cilantro, basil, mint and orange slices among 6 soup bowls.
