{"id":246,"date":"2018-06-05T15:55:52","date_gmt":"2018-06-05T19:55:52","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=246"},"modified":"2024-06-04T15:30:40","modified_gmt":"2024-06-04T19:30:40","slug":"florida-citrus-pickled-shrimp","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/florida-citrus-pickled-shrimp\/","title":{"rendered":"Florida Citrus Pickled Shrimp"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<p><strong>Spice Sachet:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>2 tsp Coriander<\/li>\r\n<li>2 tsp Fennel seeds<\/li>\r\n<li>1 tsp Peppercorns<\/li>\r\n<li>\u00bd tsp Chili flakes<\/li>\r\n<li>1 tsp Mustard seeds<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Citrus Marinade:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>2 cups (480 ml) Florida orange juice<\/li>\r\n<li>1\/3 cup (80 ml) Lime juice<\/li>\r\n<li>1\/3\u00a0cup (80 ml) Lemon juice<\/li>\r\n<li>1\u00bd cups (360 ml) Rice wine vinegar<\/li>\r\n<li>2\u00bd Tbsp Sugar<\/li>\r\n<li>2 tsp Curry powder<\/li>\r\n<li>\u00bd tsp Turmeric<\/li>\r\n<li>1 each Spice Sachet (see step 1)<\/li>\r\n<li>2 lb Shrimp, medium size, tail-on, peeled and deveined<\/li>\r\n<li>2 each Garlic, whole cloves<\/li>\r\n<li>\u00bd each Jalape\u00f1o, halved, no seeds<\/li>\r\n<li>1 cup Cilantro, whole sprigs<\/li>\r\n<li>2 cups Red onion, sliced<\/li>\r\n<li>Citrus Vinaigrette (see step 5)<\/li>\r\n<li>2 each Avocado, sliced<\/li>\r\n<li>to taste Salt and Pepper<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Citrus Vinaigrette:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>2 cup Citrus marinade (see steps 2 and 3)<\/li>\r\n<li>1 Tbsp Cornstarch<\/li>\r\n<li>1 Tbsp Cold water<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Garnish:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>\u00bd cup Cilantro leaves<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 1:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Make Spice Sachet with coriander, fennel seeds, peppercorns, chili flakes and mustard seeds.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 2:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Combine Florida orange juice, lime juice, lemon juice, rice wine vinegar, sugar, curry powder, turmeric and Spice Sachet in pot large enough to hold shrimp.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 3:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Bring to boil. Reserve 2 cups to make Citrus Vinaigrette. Add shrimp, garlic, jalape\u00f1o, cilantro and red onion. Bring back to simmer and cook for an additional 2-3 minutes and then remove pot from heat.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 4:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Pour into plastic nonreactive or glass container and refrigerate overnight.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 5:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>To make Citrus Vinaigrette: Combine cornstarch and cold water. Bring 2 cups reserved marinade to boil and whisk in cornstarch mixture. Bring to simmer until thickened. Cool and reserve.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 6:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>To serve, fan avocado slices on plates.
