{"id":215,"date":"2018-06-05T15:05:55","date_gmt":"2018-06-05T19:05:55","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=215"},"modified":"2024-06-04T15:48:44","modified_gmt":"2024-06-04T19:48:44","slug":"florida-orange-bouillabaisse","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/florida-orange-bouillabaisse\/","title":{"rendered":"Florida Orange Bouillabaisse"},"content":{"rendered":"\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 tablespoon oil<\/li>\r\n<li>4 cups onions or shallots, thinly sliced<\/li>\r\n<li>10 cloves garlic, crushed<\/li>\r\n<li>6 large tomatoes, chopped<\/li>\r\n<li>1 pound celery, thinly sliced<\/li>\r\n<li>1 bulb fennel, thinly sliced<\/li>\r\n<li>1 teaspoon salt<\/li>\r\n<li>16 ounces (474 ml) Florida orange juice<\/li>\r\n<li>16 ounces (474 ml) clam juice or fish broth<\/li>\r\n<li>2 ounces (60 ml) white wine<\/li>\r\n<li>2 tablespoons lemon juice<\/li>\r\n<li>6 sprigs fresh thyme or 1 bay leaf<\/li>\r\n<li>Zest of 1\/2 Florida orange<\/li>\r\n<li>1 teaspoon saffron threads<\/li>\r\n<li>3 pounds of assorted fish fillets, cut into 1-inch pieces*<\/li>\r\n<li>1 to 2 pounds of clams or mussels<\/li>\r\n<li>1 pound cooked shrimp, crab, lobster meat, or rock lobster tails<br \/>*Tilapia, halibut and cod work well in this recipe.<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>1. Heat a deep, heavy-bottomed stockpot over medium heat.\u00a0 Add oil and onions; cook until deep golden.<\/p>\r\n<p>2. Add garlic and cook one minute. Add tomatoes, celery, fennel and salt; cook, stirring occasionally for about 10 minutes.<\/p>\r\n<p>3. Add orange juice, clam juice, wine , lemon juice, thyme, orange zest, saffron; bring to a boil.<\/p>\r\n<p>4. Reduce heat to simmer and cook about 15 minutes.\u00a0 Taste and adjust seasoning.<\/p>\r\n<p>5. When broth is flavorful, add fish fillets and clams; simmer until fish is thoroughly cooked.<\/p>\r\n<p>6.
