{"id":203,"date":"2018-06-05T12:23:19","date_gmt":"2018-06-05T16:23:19","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=203"},"modified":"2024-06-04T15:56:39","modified_gmt":"2024-06-04T19:56:39","slug":"florida-citrus-cured-pork-belly-with-maple-bourbon-glaze-and-grapefruit-slaw","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/florida-citrus-cured-pork-belly-with-maple-bourbon-glaze-and-grapefruit-slaw\/","title":{"rendered":"Florida Citrus Cured Pork Belly With Maple Bourbon Glaze And Grapefruit Slaw"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 Tbsp Coriander, ground<\/li>\r\n<li>1 Tbsp Fennel seeds, ground<\/li>\r\n<li>\u00bc tsp Allspice<\/li>\r\n<li>2 tsp Black pepper<\/li>\r\n<li>2 cups Kosher salt<\/li>\r\n<li>1 cup Brown sugar<\/li>\r\n<li>2 lb Pork belly<\/li>\r\n<li>1 Tbsp Florida orange zest<\/li>\r\n<li>1 Tbsp Thyme, fresh, chopped<\/li>\r\n<li>\u00bc cup (60 ml) Florida orange juice<\/li>\r\n<li>3 Tbsp Florida tangerine juice<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Maple-Bourbon Glaze<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 cup (240 ml) Florida orange juice<\/li>\r\n<li>\u00bc cup (60 ml) Bourbon<\/li>\r\n<li>2 Tbsp Maple syrup<\/li>\r\n<li>\u00bc cup White wine vinegar<\/li>\r\n<li>2 Tbsp Orange marmalade<\/li>\r\n<li>2 Tbsp Butter<\/li>\r\n<li>to taste Salt and pepper<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Florida Grapefruit Slaw<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>2 cups Napa cabbage, shredded<\/li>\r\n<li>2 cups Red cabbage, shredded<\/li>\r\n<li>2 tsp Kosher salt<\/li>\r\n<li>\u00bc cup Florida grapefruit segments, \u00bd\u201d pieces<\/li>\r\n<li>1 tsp Florida grapefruit zest<\/li>\r\n<li>1 cup Olive oil mayonnaise<\/li>\r\n<li>1 Tbsp Sugar<\/li>\r\n<li>1 Tbsp Lime juice<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 1:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Combine coriander, fennel, allspice and black pepper. Reserve. Combine kosher salt and brown sugar. Reserve.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 2:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Place pork belly in nonreactive casserole dish. Spread evenly with Florida orange zest and thyme.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 3:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Sprinkle with Florida orange and tangerine juices. Season with spice mixture. Rub kosher salt and brown sugar mixture evenly over pork belly. Cover and refrigerate for 5 hours.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 4:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>While pork belly is curing, prepare Maple-Bourbon Glaze: Combine Florida orange juice, bourbon, maple syrup, white wine vinegar and orange marmalade.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 5:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>\u00a0Bring to simmer in medium saucepot and reduce volume by 2\/3. Add butter and stir until melted. Season to taste with salt and pepper. Pour into blender and blend until smooth. Reserve.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 6:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>To prepare Florida Grapefruit Slaw: Place napa and red cabbage in mixing bowl. Sprinkle with kosher salt and let stand for 10 minutes. Use piece of cheesecloth to squeeze liquid from cabbage. Discard liquid.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 7:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Add Florida grapefruit segments to cabbage. Combine Florida grapefruit zest, olive oil mayonnaise, sugar and lime juice. Pour over shredded cabbage and Florida grapefruit segments and toss to combine. Reserve.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 8:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Remove pork belly from refrigerator and rinse under cold water to remove salt mixture. Place in ovenproof casserole dish with lid and bake at 300\u00b0F for 1\u00bd hours.Remove from oven and allow to cool to room temperature.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 9:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>\u00a0Slice into \u00bd\u201d slices. Saut\u00e9 in large skillet to brown and crisp both sides of pork belly slices. Remove to plate lined with paper towels to remove any excess oil.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Step 10:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>To serve, place 1 slice of pork belly on each plate and drizzle with Maple-Bourbon Glaze.
