{"id":183,"date":"2018-06-04T17:16:33","date_gmt":"2018-06-04T21:16:33","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=183"},"modified":"2024-06-05T05:34:00","modified_gmt":"2024-06-05T09:34:00","slug":"citrus-braised-beef-croquettes","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/citrus-braised-beef-croquettes\/","title":{"rendered":"Citrus Braised Beef Croquettes"},"content":{"rendered":"\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 cup (240 ml)\u00a0Florida orange juice<\/li>\r\n<li>1 cup (240 ml) \u00a0Florida tangerine juice<\/li>\r\n<li>2 cups (480 ml) Irish stout beer<\/li>\r\n<li>\u00bc cup \u00a0balsamic vinegar<\/li>\r\n<li>\u00bd cup carrot, diced in 1-inch cubes<\/li>\r\n<li>\u00bd cup onion, diced in 1-inch cubes<\/li>\r\n<li>\u00bd cup celery, diced in 1-inch cubes<\/li>\r\n<li>1 tablespoon fresh thyme, chopped<\/li>\r\n<li>\u00bc teaspoon allspice<\/li>\r\n<li>\u00bc teaspoon nutmeg<\/li>\r\n<li>1 teaspoon pepper<\/li>\r\n<li>1 bay leaf<\/li>\r\n<li>3 pounds beef bone in short ribs<\/li>\r\n<li>Salt to taste<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>For Breading &amp; Cooking:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>2 cups flour<\/li>\r\n<li>6 eggs, beaten<\/li>\r\n<li>4 cups breadcrumbs<\/li>\r\n<li>2 quarts olive oil<\/li>\r\n<li>Salt and pepper to taste<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Florida Citrus Aioli:<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>\u00bd cup (120 ml) Florida orange juice<\/li>\r\n<li>\u00bd cup (120 ml) Florida tangerine juice<\/li>\r\n<li>1 cup olive oil mayonnaise<\/li>\r\n<li>2 tablespoons fresh chives, chopped<\/li>\r\n<li>1 teaspoon Florida orange zest, chopped<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>1. Combine Florida orange juice, Florida tangerine juice, beer, balsamic carrots, onions, celery, thyme, allspice, nutmeg, pepper and bay leaf. Pour over short ribs in ovenproof casserole dish.<\/p>\r\n<p>2. Cover dish and bake at 275\uf0b0F. for 2\u00bd to 3 hours, until meat is fork tender.<\/p>\r\n<p>3. Remove short ribs from braising liquid; reserve and cool.<\/p>\r\n<p>4. Strain braising liquid into medium saucepan; bring to a simmer. Simmer until volume is reduced by two-thirds. Reserve liquid.<\/p>\r\n<p>5. Remove short rib meat from bones and pull apart into small pieces; discard bones and fat. Add reduced braising liquid to pulled meat; combine thoroughly.<\/p>\r\n<p>6. Season with salt and pepper to taste. Refrigerate until firm.<\/p>\r\n<p><strong>While meat mixture is cooling, prepare Florida Citrus Aioli:<\/strong><br \/>\u2013 Place Florida orange juice and Florida tangerine juice in medium saucepan; bring to a simmer. Simmer until volume is reduced by two-thirds.<br \/>\u2013 Refrigerate reduced juice mixture until cold. Add mayonnaise, chives and Florida orange zest to chilled juice mixture; stir to combine. Reserve.<\/p>\r\n<p>7. Portion chilled short rib meat into small balls, 1-inch in diameter; roll between two hands to form round balls. Place short rib balls in freezer; freeze until firm.<\/p>\r\n<p>8. Roll balls in flour; dip in egg and then roll in breadcrumbs. Heat olive oil in 6-quart stockpot over medium-low heat to 350\uf0b0F.<\/p>\r\n<p>9. Fry croquettes in batches until golden brown; remove from oil with slotted spoon and place onto a plate lined with paper towels to drain excess oil.<\/p>\r\n<p>10. Season with salt and pepper to taste.
