Not only does this meal taste great, but salmon is rich in Omega-3 and serves as a great source of protein.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 \u00bc cups (295 ml) Florida Orange Juice, divided<\/li>\r\n<li>1 pound salmon fillets<\/li>\r\n<li>1 cup (240 ml) white wine<\/li>\r\n<li>2 cloves garlic, smashed<\/li>\r\n<li>2 tsp. finely grated fresh ginger, divided<\/li>\r\n<li>2 tbsp. olive oil<\/li>\r\n<li>1 tbsp. apple cider vinegar<\/li>\r\n<li>1 tbsp. finely minced shallot<\/li>\r\n<li>Salt and pepper to taste<\/li>\r\n<li>1 small bunch collard greens (about 8 oz.), stems and center ribs removed<\/li>\r\n<li>\u00bd cup toasted, slivered almonds<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>1. Preheat oven to 375\u00b0 F.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>2.\u00a0Spray a small glass baking dish with non-stick spray.\u00a0<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>3.\u00a0Set salmon in the dish.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>4.\u00a0Combine white wine, garlic, one cup of Florida Orange Juice and one teaspoon grated ginger in a small saucepan, set over high heat and bring to a simmer.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>5.\u00a0Pour poaching liquid over salmon and cover with aluminum foil.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>6.\u00a0Poach in oven for 15 to 20 minutes or until salmon is just cooked through.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>7.\u00a0Combine the remaining \u00bc cup Florida Orange Juice, remaining one teaspoon grated ginger, olive oil, vinegar, and shallot in a lidded jar and shake to combine.\u00a0<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>8.\u00a0Taste and season with salt and pepper to taste.\u00a0<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>9.\u00a0Cut the collard greens into thin ribbons and transfer to a large mixing bowl.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>10.
