The combination of chickpeas and Florida Orange Juice provides plenty of protein and fiber, which may help support bone health and maintain a healthy weight, making this dish a nutritious choice for your family.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>\u00bd cup (120ml) Florida Orange juice<\/li>\r\n<li>1 tbsp. olive oil<\/li>\r\n<li>1 cup diced yellow onion<\/li>\r\n<li>1 red bell pepper, diced<\/li>\r\n<li>1 \u00bd cups diced carrots<\/li>\r\n<li>1 \u00bd tsp. kosher salt<\/li>\r\n<li>3 cloves garlic, finely grated<\/li>\r\n<li>\u00bd tsp. ground cardamom<\/li>\r\n<li>1 quart (946ml) vegetable broth<\/li>\r\n<li>1 14-oz. (414ml) can lite coconut milk<\/li>\r\n<li>1 14-oz. can chickpeas, drained and rinsed<\/li>\r\n<li>Chopped cilantro, optional<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>1. Heat the olive oil in a medium saucepan over medium high heat until it simmers.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>2.\u00a0Add the onions, bell pepper, carrots and salt and cook until the onions are translucent, five to seven minutes.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>3.\u00a0Add the garlic and cardamom and cook one to two minutes more or until the garlic is fragrant. Do not brown.\u00a0<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>4.\u00a0Add the vegetable broth, coconut milk and chickpeas and bring to a simmer.\u00a0<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>5.\u00a0Decrease the heat to low and continue to cook until the carrots are tender, about 10 minutes.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>6.\u00a0Add the Florida Orange Juice and remove from the heat, stir.
