{"id":141,"date":"2018-06-04T12:54:21","date_gmt":"2018-06-04T16:54:21","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=141"},"modified":"2024-06-05T05:58:39","modified_gmt":"2024-06-05T09:58:39","slug":"florida-oj-chicken-chile-relleno-with-salsa-verde","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/florida-oj-chicken-chile-relleno-with-salsa-verde\/","title":{"rendered":"Florida OJ Chicken Chile Relleno With Salsa Verde"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>4 cups (960 ml) Florida\u00a0Orange Juice<\/li>\r\n<li>1 tsp.\u00a0Orange Zest, chopped<\/li>\r\n<li>1 whole chicken<\/li>\r\n<li>3 cups chopped onion<\/li>\r\n<li>1 cup carrot, cut into \u00bd-inch slices<\/li>\r\n<li>1 cup celery, cut into \u00bd-inch slices<\/li>\r\n<li>6 cloves garlic<\/li>\r\n<li>2 tbsp. ground cumin<\/li>\r\n<li>Water as needed<\/li>\r\n<li>6 poblano peppers<\/li>\r\n<li>2 cups shredded pepper Jack cheese<\/li>\r\n<li>2 cups all-purpose flour<\/li>\r\n<li>6 eggs, beaten<\/li>\r\n<li>3 cups yellow cornmeal<\/li>\r\n<li>Oil<\/li>\r\n<li>Cilantro, for garnish<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p>Florida Orange\u00a0Salsa Verde:<\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 tsp. Orange Zest<\/li>\r\n<li>2 cups (240 ml) Florida\u00a0Orange Juice<\/li>\r\n<li>2 cups tomatillos, diced<\/li>\r\n<li>1 cup yellow onion, sliced<\/li>\r\n<li>2 tbsp. jalape\u00f1o pepper, seeded, diced<\/li>\r\n<li>\u00bd cup cilantro<\/li>\r\n<li>1 tbsp. lime juice<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Rinse chicken under cold water. Place in large stock pot; add Florida Orange Juice, onion, carrot, celery, garlic and cumin. Add enough water to just cover chicken. Cover and bring to a simmer; lower heat to light simmer and cook until thermometer inserted in center of chicken breast reads 155\u00b0F. Remove stock pot from heat; cover and let stand for 45 minutes.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Remove chicken from stock and allow to cool slightly. Remove breasts and legs from chicken; shred breast meat and leg meat into 1-inch pieces and reserve.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Strain stock and discard any bones or vegetables. Place strained stock in large saucepan and cook over medium heat until reduced to about 2 cups. Remove from heat and refrigerate stock until cold.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Preheat grill to medium-high heat. Grill poblano peppers until charred on all sides. Remove peppers from grill; place in bowl and cover with plastic wrap. Allow to stand for 5 minutes; peel charred skin from peppers. Make incision along one side of each pepper from stem to bottom; carefully remove seeds, keeping whole pepper intact. Reserve peppers.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Combine shredded chicken, pepper jack cheese, Florida Orange Zest\u00a0and chilled, reduced stock; mix well. Stuff poblano peppers with chicken mixture. Roll stuffed peppers in flour, then in beaten eggs, then in cornmeal.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Heat oil in deep fryer until 350\u00b0 F. Carefully place peppers in fryer and cook until golden brown; remove and drain on paper towels. Garnish with cilantro and serve immediately with Florida Orange Salsa Verde.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Florida Orange Salsa Verde:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Combine Florida Orange Juice, tomatillos, onion, jalape\u00f1os in medium saucepan; bring to a simmer. Simmer for 5 minutes; remove from heat and cool slightly. Strain liquid and reserve.
