{"id":114,"date":"2018-06-04T10:27:03","date_gmt":"2018-06-04T14:27:03","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/oj\/?post_type=fdoc-recipe&#038;p=114"},"modified":"2024-06-05T06:31:15","modified_gmt":"2024-06-05T10:31:15","slug":"citrus-rotisserie-chicken-with-orange-and-gingered-carrots","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/oj\/recipes\/citrus-rotisserie-chicken-with-orange-and-gingered-carrots\/","title":{"rendered":"Citrus Rotisserie Chicken With Orange And Gingered Carrots"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 cup (240 ml) Florida Orange Juice<\/li>\r\n<li>1\/4 cup (60 ml) Florida Orange zest<\/li>\r\n<li>2 tablespoons Ancho chili powder<\/li>\r\n<li>2 tablespoons Lemon pepper<\/li>\r\n<li>1\/4 cup Brown sugar<\/li>\r\n<li>2 tablespoons Kosher salt<\/li>\r\n<li>2 each Whole chickens, 3\u20135 lbs. each<\/li>\r\n<li>2 cups Ginger ale<\/li>\r\n<li>2 tablespoons Ginger, minced<\/li>\r\n<li>2 cups Carrots, thinly sliced<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Combine the orange zest, ancho chili, lemon pepper, brown sugar and salt. Rub the chickens both inside and out; allow to sit in the refrigerator for 1 hour.<br \/><br \/>Place the chickens into a preheated 375\u00baF oven for 10 minutes. Turn heat down to 300\u00baF and continue roasting for 30\u201340 minutes. Allow the chickens to rest for 15 minutes prior to cutting.<br \/><br \/>While the chickens are resting, place the orange juice, ginger ale, ginger and thinly sliced carrots into a 2-quart pot; bring to a simmer. Cook the carrots until fork tender, approximately 4\u20135 minutes. Remove the carrots and reduce the liquid to 1\/2 cup.<br \/><br \/>Quarter the rotisserie chicken and lay over equal amounts of gingered carrots.
