Ingredients<\/h2>\n\n\n\n
  • 4 fillets of halibut<\/li>
  • 1 tbsp\u00a0olive oil\u00a0<\/li>
  • Salt and pepper\u00a0<\/li>
  • 70g California\u00a0Walnuts\u00a0<\/li>
  • 30g\u00a0panko breadcrumbs\u00a0<\/li>
  • Parsley\u00a0<\/li>
  • 3 tbsp olive oil\u00a0<\/li><\/ul>\n\n\n\n

    Salsa Ingredients<\/h2>\n\n\n\n

    • 2 Florida Grapefruit\u00a0<\/li>\n\n\n\n
    • 1\/2\u00a0red onion\u00a0<\/li>\n\n\n\n
    • 1\/2\u00a0fresh red chilli\u00a0<\/li>\n\n\n\n
    • 1\u00a0fennel bulb, finely chopped\u00a0<\/li>\n\n\n\n
    • 1\u00a0handful flat leaf parsley\u00a0<\/li>\n\n\n\n
    • 3 tbsp\u00a0extra virgin olive oil\u00a0<\/li>\n<\/ul>\n\n\n\n

      Preparation<\/h2>\n\n\n\n

      1. Pat the fish fillets dry with a kitchen bowl, then drizzle with olive oil and season with sea salt and pepper. <\/li>\n\n\n\n
      2. Pre heat a non stick frying pan on medium heat. <\/li>\n\n\n\n
      3. Place the fish into the pan and cook each one until golden. <\/li>\n\n\n\n
      4. Meanwhile to make the topping, chop the California Walnuts and place in a shallow bowl with the chopped parsley, breadcrumbs, and olive oil. <\/li>\n\n\n\n
      5. Turn the fish over and top with the walnut crumb. <\/li>\n\n\n\n
      6. Place the fish still in the frying pan into the oven at 160c and cook for 12 minutes or until the fish is cooked. <\/li>\n\n\n\n
      7. To make the salsa, chop the red onion as finely as you can and place in a bowl with the juice of the Florida Grapefruit and the chopped red chilli. <\/li>\n\n\n\n
      8. Stir together to help the acidity of the grapefruit; pickle the onion and chilli for a nice tangy flavour.<\/li>\n\n\n\n
      9. Add the chopped fennel and stir together once again.<\/li>\n\n\n\n
      10. Finally, add the olive oil and chopped parsley to create a delicious salsa. <\/li>\n\n\n\n
      11. When the fish is cooked, remove from the oven and serve with the salsa.<\/li>\n<\/ol>\n","protected":false},"excerpt":{"rendered":"
