1. Cut the grapefruit into supremes. To begin, cut off both ends of the grapefruit on your cutting board, then peel off the skin with a sharp knife. Slide the blade along the membranes to remove the segments. Set aside.
2. Squeeze the membranes to collect the juice in a separate container for the citrus sauce.<\/p>\n\n\n\n
3. Chop the fresh and smoked salmon. In a large bowl, combine the chopped fresh salmon, smoked salmon, capers, mayonnaise, sesame oil, vinegar and panko.<\/p>\n\n\n\n
4. Soften a rice paper in lukewarm water. On a clean, dry surface, place 2 tablespoons of the mixture in the centre of the rice paper, add 2 or 3 grapefruit supremes, fold over the edges and roll up tightly.<\/p>\n\n\n\n
5. Mix all the ingredients for the Citrus Sauce in a small bowl. Set aside for dipping the rolls!
