Fragrant and easy to make, this grapefruit salad is sure to be a family favourite.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Salad Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>2 large Florida Grapefruits, segmented and cut into bite-sized pieces<\/li>\r\n<li>16 large shrimp, peeled and deveined<\/li>\r\n<li>2 small heads of radicchio, roughly chopped<\/li>\r\n<li>\u00bc cup carrots, thinly sliced<\/li>\r\n<li>\u00bc cup scallions, thinly sliced<\/li>\r\n<li>3 mint leaves<\/li>\r\n<li>3 basil leaves<\/li>\r\n<li>2 chiles, thinly sliced<\/li>\r\n<li>\u00bc cup dry-roasted peanuts, roughly chopped<\/li>\r\n<li>\u00bc cup coconut flakes, toasted<\/li>\r\n<li>Dressing, see recipe below<\/li>\r\n<li>Lime wedges for serving<\/li>\r\n<li>Olive oil<\/li>\r\n<li>Salt<\/li>\r\n<li>Pepper<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<div class=\"wp-block-group\">\r\n<div class=\"wp-block-group__inner-container is-layout-flow wp-block-group-is-layout-flow\">\r\n<div class=\"wp-block-columns is-layout-flex wp-container-core-columns-is-layout-28f84493 wp-block-columns-is-layout-flex\">\r\n<div class=\"wp-block-column is-layout-flow wp-block-column-is-layout-flow\" style=\"flex-basis: 100%\">\u00a0<\/div>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Coconut Rice Ingredients:<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>2 cups jasmine rice<\/li>\r\n<li>1 cup coconut milk<\/li>\r\n<li>2 cups water<\/li>\r\n<li>\u00bd tsp. salt<\/li>\r\n<li>3 tbsp. coconut, shredded<\/li>\r\n<li>Coconut, toasted for garnish<\/li>\r\n<li>Scallions, thinly sliced<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Dressing ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\" id=\"block-63a3e53e-f02e-462a-98ac-4f103f05ad14\">\r\n<li>Florida Grapefruit juice, reserved from segmented grapefruit<\/li>\r\n<li>\u00bc cup fish sauce<\/li>\r\n<li>3 tbsp. lime juice<\/li>\r\n<li>3 tbsp. coconut sugar<\/li>\r\n<li>2 tbsp. water<\/li>\r\n<li>1 garlic clove, smashed to a paste<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<p><br \/>1.\u00a0Heat a non-stick skillet with a tablespoon of olive oil.\u00a0<br \/>2.\u00a0Add the shrimp and season with salt and pepper.<br \/>3.\u00a0Saute until shrimp turns pink and opaque, approximately 3 minutes per side. Set aside.<br \/>4.\u00a0Place the segmented Florida Grapefruit, radicchio, carrots, scallions, mint and basil leaves, and chiles in a large bowl. Save several Florida Grapefruit segments for garnish.<br \/>5.\u00a0Add all of the dressing ingredients in a bowl and whisk until fully combined.\u00a0<br \/>6.\u00a0Add half of the dressing to the salad mix and toss lightly, reserving some dressing for serving on the side.<br \/>7.\u00a0Rinse rice under cold water.\u00a0<br \/>8.\u00a0Add all coconut rice ingredients to a rice cooker. Cook rice accordingly.\u00a0<br \/>9.\u00a0Top cooked rice with toasted coconut and scallion.<br \/>10.\u00a0Divide salad and shrimp amongst six plates on top of a bed of rice.\u00a0<br \/>11.\u00a0Garnish with Florida Grapefruit segments.\u00a0<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Helpful Hint<\/h2>\r\n\r\n\r\n\r\n<p><br \/>For added flavor, top each serving with chopped peanuts and toasted coconut and serve with a wedge of lime.<\/p>\r\n\r\n\r\n\r\n<p><br \/>For a lighter option, substitute the jasmine rice with cauliflower rice.<\/p>\r\n\r\n\r\n\r\n<div class=\"wp-block-buttons is-layout-flex wp-block-buttons-is-layout-flex\">\u00a0<\/div>\r\n","protected":false},"excerpt":{"rendered":"<p>You&#8217;re sure to love this recipe for any weekday!
