{"id":582,"date":"2019-06-12T18:19:24","date_gmt":"2019-06-12T22:19:24","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/grapefruit\/?post_type=fdoc-recipe&#038;p=582"},"modified":"2024-06-15T04:02:55","modified_gmt":"2024-06-15T08:02:55","slug":"pan-roasted-salmon-with-grapefruit-vinaigrette","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/grapefruit\/recipes\/pan-roasted-salmon-with-grapefruit-vinaigrette\/","title":{"rendered":"Pan-Roasted Salmon with Grapefruit Vinaigrette"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 Florida Grapefruit<\/li>\r\n<li>2 6-ounce salmon fillets, center-cut<\/li>\r\n<li>4 tbsp. olive oil, divided<\/li>\r\n<li>1 tbsp. butter<\/li>\r\n<li>\u00bd shallot, sliced<\/li>\r\n<li>2 garlic cloves<\/li>\r\n<li>4 cups kale<\/li>\r\n<li>1 tbsp. lemon juice<\/li>\r\n<li>1 tsp. honey<\/li>\r\n<li>1 tsp. sugar<\/li>\r\n<li>Salt<\/li>\r\n<li>Pepper<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p><br \/>1.\u00a0Preheat oven to 400 degrees F.<br \/>2.\u00a0In a cast-iron skillet, heat one tablespoon of olive oil over medium-high heat.<br \/>3.\u00a0Season salmon filets liberally with salt. Place salmon skin-side up in the skillet, cook three minutes until salmon is crispy. Do not try to move the fish, once it\u2019s ready, it will release from the pan.\u00a0<br \/>4.\u00a0Flip the salmon over so the skin is down and place in the oven to finish cooking. Cook another three minutes until salmon is finished cooking.<br \/>5.\u00a0In a medium skillet, heat butter over medium-high heat. Add shallots, cook one minute.<br \/>6.\u00a0Add garlic and kale, cooking about five minutes or until kale is wilted.\u00a0<br \/>7.\u00a0Season with salt and pepper; set aside.<br \/>8. Cut top and bottom of Florida Grapefruit. Using a knife cut the peel and pith off. Then using a paring knife, cut Florida Grapefruit into segments, making sure to cut between the membranes.<br \/>9.\u00a0Squeeze three tablespoons of juice out of remaining Florida Grapefruit.<br \/>10. In a small bowl, whisk together Florida Grapefruit Juice, lemon juice, honey and sugar. Slowly whisk in remaining olive oil. Season with salt and pepper to taste.<br \/>11.\u00a0Split kale between two plates. Top with salmon and vinaigrette.
