{"id":345,"date":"2018-05-29T11:11:16","date_gmt":"2018-05-29T15:11:16","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/grapefruit\/?post_type=fdoc-recipe&#038;p=345"},"modified":"2024-06-15T07:11:54","modified_gmt":"2024-06-15T11:11:54","slug":"citrus-shrimp-salad-with-grapefruit-chutney-arugula-and-hot-sabayon","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/grapefruit\/recipes\/citrus-shrimp-salad-with-grapefruit-chutney-arugula-and-hot-sabayon\/","title":{"rendered":"Citrus Shrimp Salad With Grapefruit Chutney Rocket And Hot Sabayon"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>8 bunches of carrots, peeled and cut slantwise in 3 millimetre thick slices, blanched al dente<\/li>\r\n<li>2 shallots, finely cut<\/li>\r\n<li>Juice of 2 Florida oranges<\/li>\r\n<li>1 tablespoon sherry vinegar<\/li>\r\n<li>1 tablespoon ginger syrup<\/li>\r\n<li>3-4 big shrimp (Black Tigers) per person, peeled and cut in half lengthwise<\/li>\r\n<li>250 ml white Florida grapefruit juice<\/li>\r\n<li>2 fresh bay leaves, torn in two<\/li>\r\n<li>1 clove of garlic, sliced<\/li>\r\n<li>6 egg yolks<\/li>\r\n<li>Shredded peel and juice of a red Florida grapefruit<\/li>\r\n<li>60 ml white port<\/li>\r\n<li>1 small bundle of rocket, washed<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">For Carrot Chutney:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p><br \/>Fry the shallots in vegetable oil until they are glazed.Add the orange juice, sherry vinegar and ginger syrup; let it concentrate to a syrup.Add the carrots and let it softly heat for 3 to 4 minutes.\u00a0<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">For Shrimp:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Boil the juice of white grapefruit with bay leaves and garlic in a steamer.Keep the juice just under boiling level.Put the shrimp in the steamer and hang it above the grapefruit juice.Put on the lid.Let the shrimp steam for 4-5 minutes until they are almost done, then turn off the heat.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">For Sabayon:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p><br \/>Meanwhile, beat the egg yolks.Set out a pan with a fitting bowl (au bain-marie), fill the bowl one third full of water and bring to a boil.Turn down the heat.Beat the egg yolks with port, juice and shredded peel of red grapefruit in a bowl.Put the bowl on the pan with almost boiling water and keep stirring (5-7 minutes) until a light and firm foamy sauce appears.Flavour with salt and pepper to taste.Remember to keep stirring, otherwise you will end up with scrambled eggs.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Mix the rocket with carrots.Fill up cocktail glasses with shrimp, divide rocket and carrot into the glasses, and cover with sabayon.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n","protected":false},"excerpt":{"rendered":"<p>&nbsp;
