{"id":295,"date":"2018-05-28T18:45:17","date_gmt":"2018-05-28T22:45:17","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/grapefruit\/?post_type=fdoc-recipe&#038;p=295"},"modified":"2024-06-15T09:10:41","modified_gmt":"2024-06-15T13:10:41","slug":"mahi-saute-with-grapefruit-mojo-and-black-bean-puree","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/grapefruit\/recipes\/mahi-saute-with-grapefruit-mojo-and-black-bean-puree\/","title":{"rendered":"Mahi Saut\u00e9 With Grapefruit Mojo And Black Bean Pur\u00e9e"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>\u00a0<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p>4 (~225 g) mahi fillets<br \/>2 tablespoons salad oil<\/p>\r\n\r\n\r\n\r\n<p><strong>Grapefruit Mojo<\/strong><br \/>4 Florida grapefruit \u2013 zest and juice<br \/>2 limes \u2013 zest and juice<br \/>1 small white onion, fine julienne<br \/>1 teaspoon garlic, chopped<br \/>2 tablespoons cider vinegar<br \/>6 tablespoons olive oil<br \/>1\/4 teaspoon cracked black pepper, salt to taste<\/p>\r\n\r\n\r\n\r\n<p><strong>Black Bean Pur\u00e9e (optional)<\/strong><br \/>1 clove garlic<br \/>1 small onion, chopped<br \/>1 habanero or jalape\u00f1o chili pepper, chopped<br \/>1 cup black beans, cooked (or canned)<br \/>250 ml chicken stock, salt and pepper to taste<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Combine all ingredients and mix.Ladle Mojo to cover Mahi, reserving remaining <br \/>Mojo.Marinate for two hours.<br \/>Saut\u00e9 garlic, onion and chili pepper until soft.Add beans and stock.Cook 15 minutes.Place in blender, process until smooth, season.\u00a0<br \/>Heat salad oil in saut\u00e9 pan until very hot.Place fish and cook for approximately 2 minutes on each side.Ladle black bean sauce on serving plate and set fillet on top.Ladle a little of remaining Mojo on fish.Serve over mashed potatoes, if desired.Garnish with grapefruit sections.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n","protected":false},"excerpt":{"rendered":"<p>&nbsp;
