{"id":293,"date":"2018-05-28T18:41:41","date_gmt":"2018-05-28T22:41:41","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/grapefruit\/?post_type=fdoc-recipe&#038;p=293"},"modified":"2024-06-15T09:12:01","modified_gmt":"2024-06-15T13:12:01","slug":"mahi-mahi-recipe-with-charred-orange-citrus-coleslaw","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/grapefruit\/recipes\/mahi-mahi-recipe-with-charred-orange-citrus-coleslaw\/","title":{"rendered":"Mahi-Mahi Recipe With Charred Orange Citrus Coleslaw"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>250 ml Florida Orange Juice<\/li>\r\n<li>8 each Florida Oranges, sliced in half<\/li>\r\n<li>3 teaspoons Olive oil<\/li>\r\n<li>25 g Shallots, minced<\/li>\r\n<li>125 ml White wine<\/li>\r\n<li>125 ml Double cream<\/li>\r\n<li>110 g Butter, unsalted, room temperature<\/li>\r\n<li>4 each Mahi-mahi, cut into 170 g pieces<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p>Coleslaw:<\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>200 g Florida Oranges, segmented<\/li>\r\n<li>100 g Florida Grapefruits, segmented<\/li>\r\n<li>50 g Red cabbage, thinly shaved<\/li>\r\n<li>50 g Napa cabbage, thinly shaved<\/li>\r\n<li>175 g Orange bell pepper, thin strips<\/li>\r\n<li>Salt<\/li>\r\n<li>Pepper<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Using a grill pan over high heat, char the oranges that have been cut in half.Once charred, remove and set aside.<\/p>\r\n<p><br \/>In a 1-litre saucepan, reduce the orange juice to 60 ml.Allow to cool.<\/p>\r\n<p><br \/>In a separate 1-litre saucepan, add 1 teaspoon olive oil and minced shallots.Cook until translucent (approximately 1\u20132 minutes).Add the white wine and reduce until almost dry.Add the double cream and reduce by half.Squeeze 4 of the charred oranges into the double cream and reduce for another 2 minutes.Whisk in the butter and set aside over a warm water bath.<\/p>\r\n<p><br \/>In a stainless steel bowl, combine the cooled reduced orange juice with the slaw ingredients.Season with 1\/4 teaspoon salt, mix and keep cool.<br \/>In a saut\u00e9 pan over medium-high heat, add 2 teaspoons olive oil; allow the oil to come up to its smoke point.Season the mahi-mahi with salt and pepper; sear flesh-side-down for 1 minute.Turn the fish, reduce the heat and cook until the fish is fully cooked (4\u20135 minutes).Place the fish on the plate.Equally portion the citrus slaw over the top.Spoon 2 tablespoons beurre blanc around fish and garnish with a charred orange.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n","protected":false},"excerpt":{"rendered":"<p>&nbsp;
