{"id":269,"date":"2018-05-28T02:50:54","date_gmt":"2018-05-28T06:50:54","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/grapefruit\/?post_type=fdoc-recipe&#038;p=269"},"modified":"2024-06-15T09:24:59","modified_gmt":"2024-06-15T13:24:59","slug":"grilled-key-west-shrimp-with-florida-citrus","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/grapefruit\/recipes\/grilled-key-west-shrimp-with-florida-citrus\/","title":{"rendered":"Grilled Key West Shrimp With Florida Citrus"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>500 ml Florida pink grapefruit juice<\/li>\r\n<li>500 ml Florida orange juice*<\/li>\r\n<li>1\/2 medium red onion, chopped<\/li>\r\n<li>2 teaspoons seeded and chopped jalape\u00f1o<\/li>\r\n<li>50 g coriander<\/li>\r\n<li>50 g brown sugar<\/li>\r\n<li>1\/2 teaspoon coarse salt<\/li>\r\n<li>16 Key West shrimp <br \/>*May substitute Florida Orange Juice from Concentrate<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p>For Stew:\u00a0<\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 whole tomato<\/li>\r\n<li>2-3 medium red potatoes<\/li>\r\n<li>1\/8 medium red onion, minced<\/li>\r\n<li>1 teaspoon chopped coriander<\/li>\r\n<li>1 Florida pink grapefruit, peeled and cut into segments<\/li>\r\n<li>1 Florida orange, peeled and cut into segments<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>In small saucepan, combine all ingredients except the shrimp and bring to boil.Reduce heat and simmer for 5 to 10 minutes until liquid is reduced by half.Pour through fine strainer, reserving liquid, and chill until cool.Pour 2\/3 of marinade over shrimp, reserving remaining marinade for stew (recipe to follow).Let shrimp marinate in covered container in refrigerator for 1 to 2 hours (Tip:Marinade can be prepared ahead of time and shrimp can marinate in refrigerator for up to 48 hours before cooking and serving).<\/p>\r\n<p><br \/>For Stew:<\/p>\r\n<p><br \/>Core and dice tomato into 1-centimetre cubes, removing seeds.Cut red potatoes into 1-centimetre cubes and blanch until tender (approximately 4 minutes).In a saut\u00e9 pan, heat up the reserved marinade until boiling.Once boiling, add potatoes, tomato, red onion and coriander.Reduce sauce by 3\/4 then add citrus segments.<\/p>\r\n<p><br \/>While sauce is cooking, remove shrimp from marinade.Discard used marinade.On charbroiler or grill top, grill shrimp for approximately 2 minutes on each side.Serve shrimp on bed of rice with stew ladled on top.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n","protected":false},"excerpt":{"rendered":"<p>&nbsp;
