class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 pink Florida grapefruit, segmented<\/li>\r\n<li>150 g cooked beetroot, cubed<\/li>\r\n<li>130 g ricotta cheese<\/li>\r\n<li>35 g washed and picked baby salad leaves, such as ruby chard, spinach, rocket or mizuna<\/li>\r\n<li>4 slices white bread, cut into 2-centimetre cubes<\/li>\r\n<li>1 bunch fresh mint<\/li>\r\n<li>2 tablespoons light olive oil<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>For Dressing<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>Juice of half a Florida grapefruit<\/li>\r\n<li>Juice of 1 orange<\/li>\r\n<li>90 ml lemon oil*<\/li>\r\n<li>Salt and freshly milled black pepper<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p>*This can be bought in most supermarkets, or you can make your own by warming olive oil gently with thinly pared lemon zest and leaving to infuse for a day or so<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Pick the mint leaves from their stalks and crush the stalks lightly.Shred the leaves.Warm the olive oil in a pan and add the mint stalks.Leave on one side to infuse (the longer you leave this the better).Heat the mint-infused oil in a pan and fry the bread cubes until pale golden.Add the chopped mint leaves and drain on kitchen paper.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>When you\u2019re ready to eat, mix the salad leaves, grapefruit and beetroot in a salad bowl.Shake the dressing ingredients together and pour it over the leaves.Crumble the ricotta cheese over the salad and scatter over the
