{"id":1853,"date":"2024-03-18T15:43:44","date_gmt":"2024-03-18T19:43:44","guid":{"rendered":"https:\/\/www.floridacitrus.ca\/grapefruit\/?post_type=fdoc-recipe&#038;p=1853"},"modified":"2024-06-14T17:40:54","modified_gmt":"2024-06-14T21:40:54","slug":"alaska-sockeye-salmon-burger-served-with-a-florida-grapefruit-and-tarragon-burger-sauce","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.ca\/grapefruit\/recipes\/alaska-sockeye-salmon-burger-served-with-a-florida-grapefruit-and-tarragon-burger-sauce\/","title":{"rendered":"Alaska Sockeye Salmon Burger Served with a Florida Grapefruit and Tarragon Burger Sauce"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<div class=\"wp-block-buttons is-layout-flex wp-block-buttons-is-layout-flex\">\r\n<div class=\"wp-block-button\"><a class=\"wp-block-button__link wp-element-button\">Fran\u00e7ais<\/a><\/div>\r\n<\/div>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>550g salmon, skin removed and cut into chunks<\/li>\r\n<li>1 garlic clove\u00a0<\/li>\r\n<li>1 thumb of ginger, peeled and chopped roughly<\/li>\r\n<li>2 tbsp chopped flat leaf parsley<\/li>\r\n<li>Salt and pepper\u00a0<\/li>\r\n<li>1 tsp vegetable oil<\/li>\r\n<li>4 brioche burger buns\u00a0<\/li>\r\n<li>1 red onion, sliced thinly and soaked in the juice of 1 lime\u00a0<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Sauce Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>1 Florida Grapefruit\u00a0<\/li>\r\n\r\n\r\n\r\n<li>4 egg yolks\u00a0<\/li>\r\n\r\n\r\n\r\n<li>1 tsp dijon mustard\u00a0<\/li>\r\n\r\n\r\n\r\n<li>125g salted butter<\/li>\r\n\r\n\r\n\r\n<li>1 tsp dried tarragon\u00a0<\/li>\r\n\r\n\r\n\r\n<li>Black pepper\u00a0<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<ol class=\"wp-block-list\" type=\"1\">\r\n<li>Place the salmon into a food processor with the garlic, ginger, and parsley.<\/li>\r\n\r\n\r\n\r\n<li>Season with a little salt.<\/li>\r\n\r\n\r\n\r\n<li>Blend together until it forms a mince.\u00a0<\/li>\r\n\r\n\r\n\r\n<li>Using wet hands, shape into 4 equal portions and into burgers.\u00a0<\/li>\r\n\r\n\r\n\r\n<li>Heat the oil in a medium-sized frying pan and cook the burgers for 4-5 minutes on each side.<\/li>\r\n\r\n\r\n\r\n<li>To make the burger sauce, place the egg yolks into a bowl with the mustard, tarragon, and the zest and juice from the Florida Grapefruit.\u00a0<\/li>\r\n\r\n\r\n\r\n<li>Heat the butter in the microwave until it is bubbling, then carefully pour in slowly over the egg yolks while whisking together until it comes together as a sauce.<\/li>\r\n\r\n\r\n\r\n<li>Once the sauce has thickened, season with a little black pepper and set aside.<\/li>\r\n\r\n\r\n\r\n<li>When the burgers are cooked, place in the brioche buns with the pickled red onions and the burger sauce.\u00a0<\/li>\r\n<\/ol>\r\n","protected":false},"excerpt":{"rendered":"<p>&nbsp;
