Florida Grapefruit is the hero ingredient.<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Panna Cotta Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>250 g creeam (40%)<\/li>\r\n<li>100 g milk<\/li>\r\n<li>50g sugar<\/li>\r\n<li>5g vanilla bean paste (sub extract if needed)<\/li>\r\n<li>3g gelatin (1 pack)<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Grapefruit Jelly Ingredients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>2 Florida Grapefruits<\/li>\r\n\r\n\r\n\r\n<li>180-200g water<\/li>\r\n\r\n\r\n\r\n<li>40 g sugar<\/li>\r\n\r\n\r\n\r\n<li>6 g gelatin (2 packs)<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Cheese Cream Filling<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>1 egg yolk (separated)<\/li>\r\n\r\n\r\n\r\n<li>10 g dark rum<\/li>\r\n\r\n\r\n\r\n<li>40g sugar<\/li>\r\n\r\n\r\n\r\n<li>170 g cream cheese<\/li>\r\n\r\n\r\n\r\n<li>1g gelatin<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Preparation<\/h2>\r\n\r\n\r\n\r\n<p>Cut gelatin into 1 g<\/p>\r\n\r\n\r\n\r\n<p>Bring cream cheese to room temperature.<\/p>\r\n\r\n\r\n\r\n<p><strong>Panna cotta<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\" type=\"1\">\r\n<li>Put milk, cream, granulated sugar, and vanilla paste in a saucepan over medium heat. Bring to a boil, then continue to simmer for 1 minute and let cool.<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>When the temperature drops below 60\u00b0C (140\u00b0F), add the blanched gelatin plate, dissolve, and pour into a cup. Refrigerate until firm.<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Grapefruit jelly<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\" type=\"1\">\r\n<li>Peel the white and ruby Florida grapefruit and cut the pulp into 2 cm cubes. At this time, do not discard the juice and thin skins that are left when cutting, but keep them.<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>Place the cut pulp on top of the chilled and hardened panna cotta.<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>Squeeze out the juice from the stored rind.<br \/>Weigh it together with the juice from the cut pieces. Calculate the amount of water so that the juice together with the juice will amount to 300 grams.<br \/>Example: Here the juice is 114 g, so the amount of water is 186 g.<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>Bring the water to a boil, add the granulated sugar and dissolve. Add the grapefruit juice and cool to below 60\u00b0C. Add 5 g of the softened gelatin and dissolve.<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>Pour the jelly into a cup until the grapefruit is covered. Refrigerate until the jelly has set.<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>Dissolve the remaining 1 g of gelatin in the reserved jelly liquid, transfer to a Tupperware container, and refrigerate. *Use for final decoration.<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p><strong>Cheese cream<\/strong><\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\" type=\"1\">\r\n<li>Add rum and granulated sugar to egg yolks and mix lightly, Mix with a hand mixer while heating the water until the mixture becomes stiff. While still warm, add the softened gelatine and allow it to dissolve.<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>Add the softened cream cheese and mix.<br \/>If the mixture is too stiff, warm it slightly in the microwave to soften it.<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>Beat cream to stiff peaks and combine with [2]<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>Pour the mixture evenly into the cups. You can use a squeeze bag. Refrigerate until firm.<\/li>\r\n\r\n\r\n\r\n<li>\u00a0<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Toppings<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\" type=\"1\">\r\n<li>Cut each Florida grapefruit white and ruby into desired size.<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>Crush the leftover jelly liquid from making the grapefruit jelly with a fork.<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<ul class=\"wp-block-list\">\r\n<li>Arrange the grapefruit and jelly on top of the cups and brush with napage.<\/li>\r\n<\/ul>\r\n","protected":false},"excerpt":{"rendered":"<p>inspired by Japan, these Verrines (aka a parfait) are the lightest and simplest of desserts.
